as a korean, i can confirm gochujang & kimchi pairs surprisingly well with cheese💖😆 the combo is seen pretty commonly in trendy fusion restaurants in korea! i’ve also seen someone add bits of kimchi to their mac & cheese before altho i haven’t tried it
I really like fusions of asian and european/american cuisines. It might not be traditional, and some people would be offended by it, but for example tomato sauces are great with fish sauce/soy sauce/oyster sauce or like like in this instance with gochujang. I like to add different asian condiments to meat with celery/onion/carrot mixture (I just don't call it Bolognese afterwards). The end flavor is different and I like it.
I made a “Thai risotto” (spice/herb paste, chicken, peanuts and used a coconut milk/stock base for the rice) once and everyone freaked out haha. I’ve also made a “Scottish risotto” with whisky cream, haggis and black pudding. I’m all for fusion.
People who are offended by fusion foods are gatekeepers and should be ignored. I can't stand them. As long as it tastes good I don't care how many cuisines it's mixing lol
Let people be offended if they want to be; they're ultimately irrelevant. Innovation is how we keep developing new recipes that people love (and more, but I'm keeping this food-related).

Once I made Andy’s original mac n cheese (the one that’s not using gochujang ofc) and my toddler is ADDICTED. I literally made a batch of the cheesy sauce every week, pop it in the fridge, then everytime he wants mac n cheese I just cook the macaroni, heat the sauce, mix them both, and add some protein and boiled veggies. That lil kid is HOOKED 🤣 So i trust you Andy my guy!!! I will make this soon!! Only for meee!
Take it further and add some uncooked shrimp or crawdad before it goes in the oven. Dont worry, theyll cook fine in that hot cheesy roux. Greetings from Florida...
I always love to add cayenne pepper to my Mac and cheese and have it with a tall glass of full fat milk. Usually I’ll hand shred a bunch of chicken to stir in as well. Will have to try this gochujang
I've fuddled around with Asian ethnic cooking enough to suprise myself to know that was fermented chili paste😅...adds a great lil zip to the taste, as well as that pepper flavor. I've done my Mac N cheese with dried red pepper flake...gotta try this now!

My go-to mac and cheese pimping is to add peas and corn and tuna, and top with a mixture of cheese and buttery crackers of some kind. I love a good tuna mac and having the corn and peas add a bit of veg, a bit of sweetness from the corn and nice visuals of little green pops. I do a bunch of different mac and cheeses and “quesadillas” like my favorite pizza-dilla, or ham and Swiss-dilla… lol I love adding a new idea to my list, so this one is going into my mac list! Haha

Could also work quite well with doenjang (korean soybean paste) maybe a combination gochujang and doenjang if they would work together. I've only used them separately so idk how it would be lol. I once made a moussaka where I put in some doenjang as I was making the bechemal sauce, was very yummy.
I just made some gochujang powder and have been putting it on everything lately. I bet it'd be good with this Mac and cheese. As would some pulled pork.
Strangely enough i tried this for the first time just a couple of weeks ago. Granted it was box of my local store's generic of Kraft, but the Gochujang was real :)
Does anybody know what plate he has on the bottom? Is it ceramic so it can retain the heat from the bottom when pre-heating? :) Great video as always chef!
Mix in chopped jalapenos along with some Boursin cheese & cheddar for an awesome mac n cheese. Got to go with homemade breadcrumbs from 2 day old crusty loaf of bread for crunchy layer on top. I'll give this recipe a go though

Fuuuuuck, I had a bar a few towns over that did a Gochujang Mac and Cheese Pulled Pork Sandwich on Toasted Texas Toast. Thanks for reminding me of it, gotta try to see if I can recreate the sandwich using this Mac and Cheese
