I don't know about the blue hair, but in the manga it is explained that it's been years since Trunks has returned to his own time. In the anime, it is very very briefly shown that Trunks fights and kills Dabura and Babidi, whereas in the manga version Trunks is actually shown training with the Supreme Kai. The Supreme Kai is about to test Trunks' full power wielding the Z Sword, WHICH HE PULLED FROM THE MOUNTAIN THING, and throw the Katchin cube for Trunks to slice and dice. Right before that Kibito brings bad news. Babidi's ship landed on Earth. So Shin drops the Katchin cube and they go to Earth where Trunks fights Dabura with the Z Sword and defeats both Dabura and Babidi with the help of the Supreme Kai, who dies in the battle, and so Beerus also perishes and Whis gets put out of commission. Unfortunately, however, while fighting Dabura, Trunks blocks Dabura's petrifying spit attack with the Z Sword and so the sword turns to stone and shatters, and so Old Kai never emerges from it. Trunks underwent a special training in the world of the Kais much like Gohan did in the present timeline, and that training gave Trunks extraordinary power. Power you don't even know about if you didn't read the manga. Power that eventually allowed him to reach a new form. So, when Goku and Trunks spar in the manga version, Goku asks Trunks to show him his power, and Trunks goes SSJ2. Goku says he will match his power level, and goes SSJ2 as well. They spar for a bit, and Goku is surprised by Trunks' power. Then Trunks says that even though he's been training hard and fighting Black for a year now, it is no use because for some reason Black's power keep increasing at a rate much more rapid than his own, and that Black keeps reaching new levels of power really fast. So then Goku says "Like this, you mean?" and goes SSJ3. Trunks looks at SSJ3 Goku and says "WOW! What form is that?", to which Goku replies that it's a level beyond that which Trunks is using now. So they spar for a bit again, and Trunks is able to hold his own against SSJ3 Goku, so Goku acknowledges Trunks' abilities, saying "You've come a long way, Trunks. I can't believe you've reached this level of power", and then Trunks unleashes his full power. Much like how Goku in the Cell Saga maxed out SSJ, Trunks somehow managed to do something similar with SSJ2, only it is far beyond what Goku could ever reach that way. So now that Trunks has powered up to his absolute max, he and Goku keep sparring some more, and then Beerus says something like "That kid is really something else. He's far stronger than Goku in his SSJ3 form" and Whis follows "Indeed". Right then and there Trunks is about to put Goku out of commission, and so Goku does something that is not shown in drawings but basically he knocks Trunks into the ground, and Trunks doesn't get to see what Goku did because he did it so fast. After that, Beerus says "He used SSG there for a second, didn't he?" and Whis says something along the lines of "Yes. That was rather underhanded on his part. Ha-Ha!". So, at this point it is clear that in the regular golden hair SSJ forms, Trunks far outclasses both Goku and Vegeta. This new power, along with his training in the world of Kais, caused Trunks to take on a rather slim figure, much like what happened to Goku when he first went SSG against Beerus. He was a little taller, much leaner, and yet his power was at a completely new level. Something very similar happened to Trunks, and eventually it was this new power that allowed him to acquire the SSR form against Zamasu.
