We wouldn’t use egg wash on it, nor would we pan fry it. He used shredded crab meat it seems and the main distinction for a Maryland crab cake is the JUMBO LUMP crab meat. Not a pinch of Old Bay in sight either 🤦🏻♂️ I know this is Gordon Ramsey but this would taste like butt cheeks compared to what we do to it.
Right?! Mr. World Class Chef is clueless. No main ingredient identity? As for the corn ... cob to mouth. Not exactly rocket science there dude. You can have that creamed sh$t!
I'm a Brit my wife's family are from Maryland and l have been there loads and never had or seen a crab cake like this there! Daren't show this to the wife!
@@fleshen this is an outrage to us Marylanders. I don't think gordon has ever even heard of maryland lol. If you show her you might be in for a divorce!!!
I’m English and grew up in Baltimore MD and England and this is A way to do crab cakes but not THE way. Not even close to Maryland style served at most area restaurants and locals make them. (No offense Gordon- you’re awesome !) Restaurants like : G&M’s, Rusty Scupper, Jimmy’s, Blue Point, Waterman’s Pride and Pappa’s for honorable mention. They all just about make them the same or similar way. Cracker crumbs or bread crumbs , Hellman’s Mayo or Duke’s usually with whole eggs, Old Bay, parsley, fresh pepper and the crab meat. Also you don’t tightly squeeze the patties! They should fall apart when eating them with nice chunks of succulent Chesapeake Bay backfin jumbo lump meat. Fry or broil whatever you like best. Or make a Baltimore Crab Fluff- that is old school and DIVINE! I like to coat them in panko and maybe I’ll put lemon zest in when I’m in the mood but the meat stands out on its own and doesn’t need shallots and garlic and all that, but if you want it, what does it hurt? A quick google for the copycat recipe of the restaurant of your choice or just ‘copycat Baltimore crabs recipe’ and you’re off. It’s in my head - I don’t even measure! I make salmon cakes the same way. Everyone has google! Lol And no sauce! Eat them the way we do, with cocktail sauce. Better yet come to Baltimore and try them yourself!! Baltimore is awesome don’t listen to the dystopian news broadcast! Just don’t overdo it calling everyone Hon! Lol
This Absolutely Correct, I've been to Every Restaurant in Baltimore City, Especially Downtown, Fells point The Phillips, and Ocean City Maryland ,worked at Every Restaurant on the Board walk includes Costal Hwy and Delmava, so That's is Not the Correct way of MAKING CRAB CAKES ,Faidley's Seafood Lexington Market is about the Best,Way better than This ,I know I make it the same way ,but they won't give you the Recipe, But I know it lol ,and I can't really give the Source of the Sauce,I've been doing for years, like to day I'm doing Seafood platter for Me Only
Not Maryland. Not even Virginia or Delaware... Maybe a South Dakota crab cake.... In the words of Gordon Ramsay... This crab cake is shit, I can't believe you would serve that to somebody.... Bloody hell
Remember when he said he could make Pad Thai and a Pad Thai master gave his food 12 thumbs down and made a disgusted face? All of Maryland is making that face with this “Maryland style” crab cake. Lol no thank you on this
Looks good and the sides look great. But, as someone who has lived on the eastern shore his whole life and family for generations that is nothing like a Maryland style crab cake. Shouldn’t have breading, there should be no filler, and it should be broiled not fried and finished in the oven.
DO NOT! I repeat, DO NOT follow this recipe for a MD crab cake.. I'd be yelling at Gordon the same way he yells at his students. THIS IS NOT A MD CRAB CAKE!! THIS IS BULLSHIT!!! START OVER!!
Gordon can you not follow the recipe in the side of the Old Bay can??? That looks nasty!!!!! Never ever would a MD Crab Cake be made like that!!!! 🤢🤮🤮 Yeah I would get right in your face!
@@toniroberts8117 It looks delicious, but it borders on blasphemy to call it a Maryland crab cake. Maryland Crab Cakes are simple if they're done right, Gordon's over complicating this. A pound of lump (not shredded) crab meat per one egg, add just enough mayo and breading to keep its shape and not any else, throw in a bunch of Old Bay seasoning (you'll get that balance right through trial and error but more is better), form them into balls and broil until the cake is golden and the edges of the lumps are lightly charred. That's all you need. If you did it right, the cake should fall apart when you touch it with the fork. Cocktail sauce and Old Bay are commonly used as dipping seasoning. Some people drizzle butter over them before they go in the broiler.
Just did some research. Apparently, there's a place called 'Maryland' in Liberia. Maybe that's where these crab cakes originated from. Because they're certainly not from here.
Should also be 95% lump crab and the other 5% the binders and maybe a dash of seasoning if you REALLY wanted a MD crab cake but wow that title just irritated me.
Good thing there are a hundred comments saying its not a maryland crab cake. After about 20, people should have thought "oh its been said 19 times, i dont need to post it again"
FLAIR !!! You deserve to be at the top because of your flair! (From a former function, hotel, industrial, and agency Chef). At 60 now its all indulgence for friends and myself LOL.
Ugh...live and raised in Maryland, if he served that here, he would not be happy with his reviews..i will trade crab cakes with his beef wellington though
Creamed Corn, Asparagus, good enough. The rest? Lets just call it Gordons take on a Crab Cake. Visit the Inner Harbor sometime. Start at Faidleys maybe...more suggestions everyone?
Water Street Tavern makes a pretty bomb-ass crab cake. They're in an alleyway off of Light Street, near the Inner Harbor. It's been a while since I've been home, I hope they're still open.
I was so curious about Maryland crab cake since it was served as lunch main course for President Moon and Baiden recently. It doesn't look the same, it is more close to crab cutlet. Looks delicious though.😉
This is NOT a Maryland crabcake! This abomination would be thrown in the garbage in any restaurant in Maryland! This “thing” literally looks like something you’d find in the frozen seafood section at a grocery store.
This may be the one thing I don’t like from Gordon Ramsey. I do not like breaded crab cakes. Takes away from the crab. There’s already bread crumbs mixed in.
I knew this lady who said the secret to her crab cakes were the green crumbs. I have no idea what those crumbs were and she is no longer here. I think they were wet crumbs and were put on at one stage of the process. I think they may have been something with cream cheese as she was from Philadelphia. Have you any idea what they could be?
The ONLY thing this has in common with a TRUE Maryland Crab Cake is the use of crab. Edit: With that said im SURE he can absolutely KILL(in a good way) an authentic MD crab cake if he decided to. So im gonna say he never intended it to be nothing more than just a crab cake, but not at all the right thing for MD. I will not thumbs down due to someone "EFFIN" up the title.(no 👍 though 😏)
How much is that fancy plate $100? Because I'd still be hungry after that appetizer. Then knowing Gordon he'll toss the rest like no I need all that please
That abomination is not a Maryland crab cake and would be thrown in the trash at any restaurant in Maryland. It literally looks like it came from the frozen section of a grocery store, and probably tastes like it too. That being said, fancy restaurants in the Baltimore/Annapolis area would charge $20-35 and normally the higher prices of that range means you would get two cakes. 1 cake is usually very filling though.
All I have to say is Maryland doesn't even know what a crab is, more like crawdad's Blue Boy !!! West Coast is the Best Coast , Dungeness all the way !!!
Yes if he don't take that store brought looking cake back to England or wherever he from. How this guy have a show putting other people food down. That cake is something a Chinese store would sell for $3 a cake. And he want to use the name Maryland style. The same way people around the world wanna say their steak is a Philly cheese steak. Not no never. They sell meat on a roll.
That Hass to be the most bland crabcake I’ve ever seen I know for a fact it has no flavor or season taste like bread crumbs probably and that’s not how Maryland make their crabcakes
