salt sucks out the moisture I use dry rubs with yellow mustard to hold the rub on. Mayo also works

WINTER is coming, I'm a Northern European Truck driver, and here our Diesel will be winter treated but still we have heated fuel lines and a heated pump in the fuel tank .... this because temperatures can drop to -30°C in the northern hemisphere .... maybe a tip for you to prevent diesel fuel gelling up during the trips. Our trips even go up north across the polar circle.

I love Tri Tips

When you split the Chicken or a Turkey its called spatchcock, I did a turkey for Thanksgiving it was the best we have ever had! Nice and crispy with no soggy mess on the bottom of the bird. Love some Tri-Tip, when I was stationed in Riverside, CA they had Santa Maria Barbecue's where they used Tri-Tips only and it was fantastic! Here in SE Mo we have to hunt the Tri-tips down, hard to find. I think how you cut them will help in the tenderness. Be safe, have fun!

I'm glad that you got through Minnesota without stopping in Fargo (I've watched too many of that series)!! On your first try with the the butterflied chicken, so there is no need to go overboard with brining etc. Put the chook (medium size) on the cutting board and cut through the breastbone with a decent knife. Then pick up the chicken , thumbs inside the cavity, and open it up. Then put it down on the chopping board and use your closed fist to flatten it along the spine, gently. Lightly sprinkle with salt and pepper on both sides and then a light sprinkle of olive oil both sides. Insert temp thermometer (don't hit the bones). You will need to flip it every five minutes (Lid down of course). On a Weber Q with town gas, it takes about 20 -25 minutes. Just when the breast reaches the set temperature (check on web, I don't know Fahrenheit) take it off and let it rest for a couple of mins with foil over it. Breast will be juicy, thigh and legs just right, and skin crispy (for Heather). Minimal work. Enjoy. Later, you can experiment with rubs, tandoori marinade, brining etc.

I stopped at loves last week in Utica IL. Round midnight to refuel.. and the whole store was closed. But Fuel islands are all up and running. I thought this was crazy they have signs on the door closed from 10 to 6 AM.

If you want to get super tender steaks look up marinade in pineapple. It can actually get too tender. Has to be a fresh one, not canned

Flying Js in "cold weather zones" (IA, IL, CO, MA, MI, NY, ND, SD, MN, NE, WI, WY) start to treat their fuel from the first time the temp drops to 15F through the beginning of May. Town Pumps in MT usually also switch over to winter blends in October and keep it through April or May.

I hope you had a great Thanksgiving. As always, I spent it alone, mostly sleeping the day away. I had 4 fried hot dogs cut up in pieces and baked beans soaked in brown sugar and syrup, then drained, is a really good one pot dish, quick and easy to make and very delicious. If you can tolerate thin toast which I can't, it is really good dipped in the sauce. Fry hot dogs first in butter & when done take scissors and cut into really small pieces , then add the baked beans and brown sugar and syrup, leave simmer about 20 minutes and drain. I think you and Jason will totally enjoy this fast tasty meal. I'd say 4 hot dogs and one can of beans for each person. As always, I hope you guys are doing well health wise and the good loads keep coming and your travels are super safe. BTW, congrats on finding the KOA, and passing the level one inspection and getting a nice white sticker.
