GOURMET SPANISH STYLE MILKFISH
INGREDIENTS:
Milkfish (2kg)
Pomace Olive Oil
Pickled Cucumber, 3pcs
Olives
1 carrot, sliced
2 bulbs garlic, crushed
Bay Leaves
Red Chili
Seasoning: Oyster Sauce, Crushed Black Pepper, Salt, Dried Basil, Ginisa Mix
Preparing the Fish:
1. **Cut the Fish**: Make sure to cut the fish first.
2. **Create a Brine**: Add enough water to fully submerge the fish, then mix in half a cup of salt.
3. **Brine the Fish**: Place the fish in the brine, cover it, and leave it for about 1 hour. This helps season the flesh and make it tender.
Preparing Other Ingredients:
1. **Carrots**: Peel two carrots and, if desired, use a zig-zag knife to cut them for added design.
2. **Garlic**: Crush the cloves from two bulbs of garlic.
3. **Red Chili**: Add red chili to taste.
4. **Pickled Cucumber**: Chop three pieces of pickled cucumber.
Cooking:
1. **Layering Ingredients**:
- Use a Nutricook Smart Pot with the pressure cook option.
- Start by layering the vegetables at the bottom.
- Add the fish.
- Add more vegetables.
- Season with cracked black pepper, any dried herbs, and fish sauce.
- Repeat the process until all your ingredients are added.
- Add green olives for additional flavor.
2. **Final Touches**:
- Add some oyster sauce and one cup of water.
- Drizzle with pomace olive oil until everything is coated.
- For extra seasoning, add ginisa mix.
3. **Cooking Time**:
- Seal the smart pot to keep the pressure in and set the timer for 1 hour.
- After an hour, release the pressure. Once it stops, you can open the pot and enjoy your meal.
