You can make them a week in advance, but just pack them well individually (i use a heat sealer) to keep them fresh. I also freeze cookies if I'm working on a big project. Use a freezer quality bag or container. I freeze once the icing is fully dry (18-24 hours after the 1st flood). Then when I bring them out of the freezer, I let them rest for 4 hours and come to room temp. The avoids any condensation forming in the cookie bag and reduces any color bleeding.

Thank you for this tutorial, Can you tell me if you don't use the pico or kopykake projector? I looked up the one you give the link for here and it is different is this one easy to use for cookies? And do they sell the tripod separately? Love these cookies and I have a grad this year I wanted to do the cookies for. I haven't purchased any projectors.

He Deborah, I just checked the link and it is to the same projector in the video. I like this projector for cookies. You can watch the video to see how I use it to mirror with my ipad. I find it is pretty easy to set-up. If you like a low-tech option, you should check into a KopyKake projector (larger in size, but easy to use). The tripod is sold separately. @@deborahanderson1905 I have only used it with an ipad. YOu'll have to ask the company for tips on syncing with other devices. But it does look like there is android option. I just prefer to use my ipad mirroring feature because it is easy.

Beautiful cookies. I attempted my first set of cookies recently, and they were a hot mess. The cookies were actually good, but the icing did not work well while decorating
