Graffe Napoletane con Patate Recipe | Italian Donuts | Easy step-by-step instructions.

Ingredients:
8 cups of flour (1 kilo)
1 lb of potatoes peeled and cubed (3 cups)(500 grams)
1 cup room temperature milk(240 ml)
2 tsp dry active yeast
2 tablespoons sugar
1/2 tsp salt
4 eggs
1 stick butter (4 ounces) (112 grams)
2 teaspoon vanilla
Zest of an orange
Zest of a lemon
3 1/2 round cutting ring
1 1/2 round cutting ring
For Frying:
4 cups or more oil for frying vegetable/canola/sunflower
For Coating:
1 1/2 cups of granulated sugar for coating graffe/donuts
Directions:
Step#1- Peel and cube the potatoes. Boil them until soft and let them cool. About 8 minutes. Use a ricer or masher to mash the potatoes. A fork can be used too.
Step#2- Pour the flour on a work surface. Create a well.
Step#3- Proof the yeast by adding half the sugar to the milk, add the yeast, and check that it bubbles. That means the yeast is alive and active.
Step#4- Now add to the flour well the remaining sugar, salt, lemon zest, orange zest. Add the potatoes.
Step#5- In the middle slowly pour the milk/yeast on pull the flour from the sides towards the middle incorporating the fry to the wet.
Step#6- Add the eggs and with the tips of your hands break and continue mixing. Add the vanilla. Now slowly mix in the melted butter and keep gathering the flour from the outside towards the inside until a smooth dough is created. Work gently for a few minutes. Create a ball and place it in a large bowl, cover with plastic wrap and let it rise until doubled. This should take 2 to 3 hours.
Step#7- Move dough to work surface and roll about 1 inch thick. Use the large cutter to make circles and the small cutter to cut a hole in the middle of a large circle creating a donut.
Step#8- Place all the donuts on a table cloth or kitchen towel that’s been lightly floured. Cover and let it rise for an hour.
Step#9- The small cut out circles are perfect for donut holes that once fried you can fill with Nutella.
Step#10- The traditional graffe are made by rolling the dough in 3/4 thick logs, cut at 8 inches, and fold over each end creating a script letter E.
Step#11- In a wok or deep frying pan bring oil to 365 degrees Fahrenheit (185 Celsius), gently add the donuts/graffe and fry on each side for a few minutes until golden. Drain on a paper towel and roll in granulated sugar before they cool otherwise sugar won’t stick.

Hello Alessandra, I subscribed to your channel yesterday and had to call my mother’s(Phyllis) friend, Angela to ask because I just knew you were her sister! Same exact Italian/NY accent! Refreshing to hear since I moved from Ft. Lee to Indiana some years ago. I miss all things Italian since there aren’t any Italians here! No bakeries, no good cannolis, etc. My mother used your recipe for Ricotta cheesecake and I’ve continued the tradition.. I’m so glad I found this channel! 😊

I miss being able to go to the bakery and get an assortment of them.. I tried a recipe I found online that claimed to be just like NY and it was a LIE!! Lol

Bonjour, très bonne recette. J’ai fait ces beignets le jour de mardi gras mes petits enfants et enfants se sont régalés. J’ai traduit les ingrédients en français : 1 kg de farine, 500 g de pomme de terre en purée, 240 ml lait température ambiante, 2 c à café de levure, 2 c à soupe de sucre, 1/2 c à café de sel, 4 œufs, 112 g de beurre, 2 c à café de vanille.

Love that you found the Italian envelope of vanilla.my moms family used to bring it to her when they visited from Italy. (& aqua mineral envelopes) I will look here in Milford CT and neighboring towns for it. :-)

Grazie cara Maria! Non ti saprei dire e poi cambierebbe anche il colore. Comunque puoi provare facendo un 1/4 di dose. Sai potrebbero essere anche migliore. Spero che tu le faccia perché sono divine, non ti dico mettendo la nutella ed andrebbe bene anche il dulce de leche che io adoro. 🥰🥰

I don't hear it anymore. 😥 Did you teach your kids Italian? My father spoke it but never taught us..He was born in NY but Italian was his 1st language..He had to learn English for school. Oops I just gave my age away 😂😂😂 My 2 oldest daughters are fluent in italian and Napoletano, my youngest less because I’m Just tired. LOL Susan when your father was young it was a different mentality. You became American and no need to speak another language. We also travel almost every year to Italy and it sure helps the girls with the language snd culture. I always look forward to your beautiful words. 🥰🙏🏻

@@alessandrasfoodislove That's so nice for your children. And yes. You are right. My grandparents said, " You're in America. You speak English!" They didn't want to carry the language on. My dad had no choice. They didn't speak English. My mother's people did so she knew ZERO Italian. Here's a funny story. Years ago I met a guy from Sicily who spoke basically no English. He was so excited to meet my father and to speak Italian with him. When he came to the house the first time and my father spoke to him oh, he fell out laughing. He couldn't breathe. He asked my father who taught him that Italian his grandparents? But that's how bad it was. It was so broken. It cracked the Italian guys up. After he left to go back to Italy when he would write to me in Italian oh, my father couldn't even translate it. I had to go get an old man at the Italian deli to translate it for me. Don't ask me how we dated. I have no idea. But we had fun! I figured you had been in this country for a while. No detection of an Italian accent at all. On the other hand I was 15 when we move to Florida and now I'm almost 66 and I still sound like you. LOL go figure? Your girls are lucky to have the duel nationalities. That's really nice. And PS you look great. I thought you were in your forties. And I mean your early forties. I wish I could post a picture of myself. People never believe I'm as old as I am. It's those Italian genes girl

Good Morning, Alessandra! Oh this brings back memories of my grandma’s doughnuts. She did them on the counter too, but unfortunately I can’t due to really bad arthritis in my hands and wrists. How long would you knead it in the kitchenAid mixer? Take care and God Bless.

Thank you Danielle. It’s all about the sweet memories. 🥰 you can add the ingredients but fold in the butter last and mix just about 5 minutes until it creates a smooth dough. You’ll have no problem rolling it out because it’s a soft dough. God bless. Be safe and let’s keep cooking together 🥰
