Sorry, went off on a tangent but here's the process:
Sauté onions in a pot with olive oil to bring out the flavor in the onion. Add carrots in 1" chunks and sauté for another 5 minutes. Layer smoked ham hocks (any smoked pork) and sausage on the bottom of the pot. Add fermented cabbage or sauerkraut (optional). Add red and white beans, I use canned beans and the water out of the can just for convenience. Add a chopped green bell pepper, and red if available. Cover with water and simmer until the ham hocks almost fall apart, approximately 2 hours. Make a rue to thicken the sauce, olive oil and flower with a table spoon of paprika, stir into the pot and let cook off for another 30 minutes.
