ive had one time where there was a physics glitch. i ran over a curb too much at spa and it threw my car way up in the air and flipped me around.

I feel like that's a good thing tho, makes the single player more forgiving so when you get pissed off at the ai and want money, you can bump, smash, brake check and cut every corner to win. GT games have always been like that, and that's awesome.
