Today we had a change of scenery and cooked an Italian Feast featuring our grandma’s Lasagna with mini meatballs recipe at our longtime friends, Carol and Ladson’s place. We help them entertain their family Christmas get together and cooked for about 20 folks. We also served Lobster Bisque, Tossed Italian Salad, Sausage & Peppers, Manicotti and Eggplant Parmigiana. A feast fit for a King!

This is exactly how my grandmother made her lasagna. No ground beef crumbles, just a bunch of mini meatballs. Every Thanksgiving and Xmas day we would have escarole soup with the same meatbatlls, then lasagna, then a big turkey and ham. My job was to grate the cheese all day.

Though I am of Portuguese / Irish decent we so share so much for the love of good food and family. I so love this and I feel and know we have to get back to this as it should be. Friends and famil at the dinner table enjoying good food and such together. As always looks delicious. I might try the Egg Plant someday but definitely do some Lasagna Roll ups with Chicken Parm sometime. Definitely might have a surprise in the near future for you guys to make it easier in the kitchen for you guys. God Bless...

I look all over for good ricotta. Where did you all find that one? My preference is Polly O. Live in Frisco and can't find any. Lasagna and Eggplant looked awesome! Ever put hard boiled eggs in the lasagna, that the way my dad does it.
