Copious amount of oil &salt should be added. Since Avakkai Mango is seasonal, it can only be made once a year and needs long shelf life. Water will defeat this purpose
Pickle doesn't rot when salt water added We get the salt water , from the salt that we added when we put salt at the beginning of pickle making process
