Grandpa's Baked Beans (With a Twist)

Bbq baked beans, cooked on the Pit Boss Pro Series 1150.
2 cups Thompson's white pea beans
2 tsp apple cider vinegar
1/2 tsp dry mustard
2 tsp prepared mustard
1/8 cup molasses
2 heaping Tbsp brown sugar
1/4 cup ketchup
1/4 cup BBQ sauce
5 cups cold water
1 Tbsp baking soda
Rinse and sort beans, add to pot with 5 cups of water. Just before boiling, add baking soda. Turn burner to low and simmer for 15-20 minutes. Remove from heat, cover and leave on the stove (in water) overnight.
Slice onions about 1/4" thick, chop and fry bacon.
Drain water and set aside for later. Mix all other ingredients as well as bacon and pour over beans. Stir well until completely mixed.
place onion slices in bottom of Dutch oven, pour beans over top and then add the water to cover beans (save any extra incase beans begin to dry out).
Set on preheated smoker (25-275°) for 4 to 5 hours, removing lid and stirring for the last hour.
