Those loaves look amazing!! Nice job! I also started a sourdough journey this year. The 1st couple times I used my starter it didn't work. My dough was just a sticky sloppy mess and I had to throw them out. I think my started wasn't mature enough at 2 weeks old, even though it passed the float test. It took about month before my dough finally had the correct rise. Now I'm making loaves for friends and family. They're delicious! Have you seen Lisa from farm house on boone? She has great sourdough tips and sourdough discard recipes.
