Yes, you should put a hole through the dummy before covering in fondant so it's easy to stack.. we lost a part of the clip, if you watch again you will notice the hole while covering the cakes with fondant.

Dummies can hold the weight of the cakes which are up on them , these three layered cakes will collapse, if it would been just in cakes instead of dummy, Dummy will make steardy and will withstand for longer time
Please were dowel rods insert on the individual cakes before stacking?? Also how did you insert the dowels you mentioned for the sides. And did you use separators in the stacking?

The dummy part will be down and the cake part up. No your pipe won't break if it's well secured... you don't have to melt it, you can also drill the board and then secure with hot glue.
