Great Depression Pineapple Squares Recipe - Old Cookbook Show
Yes depression era foods and depression era cooking was for the most part about thrift for a lot of people... it doesn't mean that people stopped eating, or stopped making foods that were fun or used exotic ingredients. I'm sure your grandparents walked uphill both ways in a snowstorm barefoot and hungry to get to school and home again everyday - but when they got home they probably had a slice of cake just like this. (they just never mention that part of the story)
Pineapple Squares
2 cups TOWN CRIER Flour
4 teaspoons baking powder
¼ teaspoon salt
2 tablespoons sugar
¼ cup shortening
1 egg
½ cup milk
3 tablespoons sugar
1 cup crushed pineapple
¼ cup chopped almonds
Sift the first four ingredients together. Cut in the shortening. Add the beaten egg and milk together. Add the crushed pineapple. Mix well and turn into a shallow, greased pan (about 9x9 inches). Sprinkle with the chopped nuts and the three tablespoons sugar mixed together. Bake in a hot oven (425 degrees F.) about 25 minutes. Cut in squares and serve hot with butter.
