Ingredients:
3 - 4 pounds fresh, ripe tomatoes, stemmed and rough-chopped (I used a variety of heirlooms)
1-2 red bell peppers, seeded and rough cut
1 small green bell pepper, seeded and rough cut
2/3 English cucumber, medium diced
1/2 rough cut red onion
5 minced FRESH garlic cloves (about 1 Tablespoon)
1/2 cup fresh basil leaves, torn
1 teaspoon freshly ground black pepper
2 teaspoons sea salt (or salt of your choice)
2 teaspoons ground cumin
Instructions:
Add all ingredients to high-speed blender and blend until smooth. Cover and refrigerate at least 4 hours or overnight.
To serve:
Finely dice red onions, cucumber, basil, and some parsley. Place in small bowls. Keep other items on hand such as fresh lime zest and lime wedges, micro-greens of your choice, seasoned olive oil, salt, black pepper, red pepper flakes, and cooked, cold shrimp for garnish. Serve in bowls, shot glasses, hollowed bell peppers, or do like I did in the video and get those unused martini glasses out and have some fun!
