Greek Courgette/Zucchini Tart - ΤΑΡΤΑ ΜΕ ΚΟΛΟΚΥΘΙ 

This is a delicious light tart, perfect for lunch or supper.
Ingredients:
For the pastry - 2 cups all-purpose flour, 1 egg yolk, 1/2 cup butter (melted)
100ml water, and salt
For the filling - 500g courgette, 2tbsps mint, 2tbsps parsley, 2tbps dill, 2 eggs, 3 spring onions, 2 tbsp breadcrumbs, 1 cup of grated sharp cheddar, 1 cup feta - crumbled, 1 cup Greek yogurt
