Greek Feta Cheese Balls-simple and no kneading required

All things Greek🇬🇷 this is another one of my mom's recipes you are sure to love.
My mom made bread for my dad every week, and sometimes, for a treat, she would take some of the dough and put feta in it and fry it for the kids.
Tomorrow, I am taking some to the kids and my kids-in-love. They are all grown up now, but who doesn't love bringing back a memory of their Yaya's Feta balls?!
I will be experimenting by making this recipe with gluten-free flour. I will let you know how it goes!
No KNEADING is required with this recipe.
RECIPE
3 cups of bread or all-purpose flour
2 teaspoons rapid rise yeast
2 teaspoons salt
1 1/2 teaspoons warm water (120F)
1-2 Tablespoons olive oil (to prevent sticking)
1 lb. feta cheese
2 cups olive oil (to fry balls) strain and store in jar in frig when cooled
I managed to get 21 Feta balls out of this recipe.
Using a large mixing bowl, combine 3 cups of flour, 2 teaspoons of rapid rise yeast, and 2 teaspoons of salt. Stir with a large spoon. Pour in warm water, 120 degrees F, and stir.
NO NEED TO KNEAD. Just stir!
Cover with a plate or saran wrap and place an unheated oven. Turn light on in oven, gives it some heat. Let it rest for 1 1/2 hours to 2 hours.
In the meantime, take your feta cheese and cut into approximately 1/2" squares. Place in a separate bowl.
Pour your 2 cups of olive oil into a saucepan that you will use to fry your feta balls. You want to use a medium to large saucepan, so the oil doesn't spatter all over your stove.
After 2 hours, you should have dough doubled in size and have a slight giggle. Remove your cover from your bowl with dough and pour it onto a floured surface.
Cut into quarters and again into half's until you get approximately 2- 3-inch balls when flattened. Dough will be slightly sticky. Add flour around your work surface. Dip your fingers in a little olive oil (makes it easier to spread out) and flatten into circles. Place a small piece of feta cheese right in the middle..not too big because it would spill into the hot olive oil. Fold the dough around the feta and then pinch it in the middle to cover the feta. Place under the towel until you are done.
Heat up your olive oil that is in the saucepan on medium-high. You know that it is hot enough when you gently drop a feta ball, and it turns golden brown in about 2-3 minutes.
They are ready to enjoy hot or also DELICIOUS served cold. Which makes it a great little appetizer prepared the day ahead. This will keep in the refrigerator for several days. If they last that long in your house.🤷‍♀️ They end up in my belly around here. LOL
Just remember to heat up leftovers in the toaster oven or regular oven to keep it crunchy on the
outside.

Sounds delicious. I couldn’t tell what you did to stop the clicking! I’d like to know because my stove does this sometimes.
