Just made this bread. Still too hot to taste. I added black olives, halloumi cheese, sautéed onion, dried mint and fresh parsley. Can’t wait to taste it! Thanking you for this and other recipes.

Made this. In the oven now! Didn’t have sesame seeds, so used “everything but the bagel” shaker seasoning. Oh my! In the oven only 5 mins and the aroma is absolutely intoxicating.

The ingredients of this filling reminds me of a style of stuffing that my mom (who is from Guam) made for Thanksgiving every year. My guess it was a recipe that my great grandmother from Spain had brought to the island. It has black olives, pimentos, diced dill pickles, and diced fried potatoes. I may modify this recipe to include those ingredients. I bet my family would love this. Thank you!

You are a wonderful teacher. It is great that you give alternatives too because I am dairy restricted, have nut allergies and cannot have tomatoes either. Also love that you don't have any gimmicks like "jokes". You just do and teach.
You are such a patient baker and cook. Makes me miss the annual Greek Food Festival in my town since covid cause it to be cancelled. One of my favorite dishes is a green bean with potatoes and carrots. Sounds simple the flavors are so good.
The very first thing I thought of when I saw this were the incredible muffulettas I had in New Orleans! I could eat one every day! There are strong similarities between the two.
OMG...my husband and I just finished almost 1/2 of it... DELISH! I added feta and ham (only because it was in the frig). I was worried I would not have enough dough to close it, but there was plenty... next time I will leave the bottom (which becomes top) thicker. Mine was not round OR a rectangle...let's just say "one of a kind". ❤️

Oooh. I've been messing around with sour dough recently, just making it into whatever, bagels, pretzels, cinnamon buns, flat bread, pizza, calzones, ect. I'm always interested in new options, I hadn't even thought of putting a bunch of roasted veggies and olives inside, it looks so good. Will have to try soon.
Wow! This bread looks tasty , I love olives , so a mix of black and green olives with your ingredients plus feta cheese would definitely be my choice of ingredients. But with sunflower seeds instead of sesame seeds due to a medical condition I cannot use sesame seeds. So yes this bread would definitely be a favorite bread to bake for me and my family. Thank you for sharing. Your a good instructor. Your extra tips also helpful. Use of olive oil for non stick and for use of other ingredients options and not much kneading needed so Simple I like simple 😁🙏 God bless you and your classes. GREAT job!
Oh fili mou, a slice of pita for me parakalo. This recipe reminds me my home Country, all most same ingridients but a little bit more local herbs and hot ,spicy pepper too. Efkaristo poli for sharing.
looks delicious. I would add dill, fried mushrooms, garlic, feta cheese, lemon. with a pinch of salt and pepper . I avoid white flour, sugar. so I wold bake it in a tortilla . and turn it into a tortilla pizza

When I was younger there was this bakery of a subway station on my way to work that had an oregano and olive medley focaccia. I still dream of that focaccia. Yours looks amazing! I know this will be a very addictive recipe. I'm going to try it on the weekend. Thanks Dimitria.

wow I’m going to make this today, I was just thinking what can I do with all these scallions in the fridge. I have roasted red peppers in the pantry (a tip I got from you) and will add sundried tomatoes.

Dear Dmitra, are there a lot of vegetarian and vegan Greek dishes ? I am basically a vegetarian, lately avoiding much dairy. I don’t consume meat, fish or eggs at all. Use plant based milk for coffee. Some yogurt and butter for cooking.
