Green curry with Chicken is one of the most popular Thai dishes I get asked to teach at my Thai cooking class here in Khao Lak, Thailand.
Nowadays it's easy to find Thai curry pastes all around the world and they are almost as good as the fresh pastes I can get here from my local market.
I use Thai eggplants in this recipe but your usual eggplant or aubergines will do the job just fine instead. You can also replace the chicken with pork, shrimp, beef, tofu or even more vegetables.
You will need the following ingredients:
2-3 chicken breasts, chopped
25g green curry paste
250ml coconut milk
1 handful of Thai eggplants, quartered
4 kafir lime leaves
2-3 sweet chillies
A good handful of sweet Thai basil
1 tsp fish sauce
1 tbsp palm sugar
1 tsp chicken stock
