For some reason we ended up with a boat load of green tomatoes here in the Cascade Range of Oregon's Pacific Northwest. Now I'm looking for creative ways of using them. Hmm. So I took half of them and pickled them. Now the other half I would like to do something different. I have been watching you for years now. And you inspired me to do the SALSA. Oh yea. Um, Not the dance. OMG. The sauce. Thank you.
I planted way too many cherry tomato plants and got 30 lbs of green tomatoes. I made chow chow out of them but next year I will try this recipe, it looks delicious and very colorful. Loved the background chatter lol

This recipe was originally for three day pickles using cukes, but instead use green cherry tomatoes, Slice 1.5 gallon of green cherry tomatoes, Also add 2 or 3 slice onions, add two cups of vinegar, 4 cups of sugar, 2 tsp of salt, 1 tsp of celery seed, mix well pour over cold ( do not heat) set in refrigerator for three days. They will not last that long!
Ymmmmm.....although at the beginning I was expecting this to be tomatillo salsa, as here many people call the tomatillo, tomate verde/green tomatoe, but the hot peppers, the colorful and sweet bell peppers, the corn niblets, the cilantro, the garlic....truly a yummy salsa to brighten up any maindish you serve up to Poppa and Company,...lol...mad and laughin' you were Mrs. V, but all's in having good times with the family! :)

Goodness, how did I manage to miss this video??? Last summer I tried a 'safe' vlogger's roasted corn salsa video but it was too darned sweet. Am looking forward to trying this video this upcoming gardening season. I've had gastric bypass too and love to have my fat-free Egg Beaters (or equivalent) every morning plus a healthy glug of salsa to make it a 'slider' and prefer those salsas to be home canned. Can't wait to give your recipe a try, Ms. V.!
i have one in a box i haven't used yet for almost a year now . i really need to n stop doing everything by hand !!! i am use to chopping by hand because we own a family restaurant for over 40 years now .
Between the heat, no rain and the blossom end rot, my tomato crop was almost nil this year. My peppers (jalapeno, sweet banana, hot banana and serrano) on the other hand went crazy. A 3 gal. bucket full twice a week. I don't even like peppers. lol
Green Tomato Salsa 16 cups chopped green tomatoes 8 cups chopped Yellow Onions 1-2 tsp chopped fresh oregano 3 cups Chopped Cilantro 4 cups chopped Red, orange & yellow sweet peppers 4 cups frozen Corn 1 Cup Hot Banana or Jalapeño peppers 1 cup minced garlic 1 cup cider vinegar 3 T pickling salt 1 T sugar 1 t garlic powder 1 t black pepper 2 cups lime juice Bring to a simmer & fill sterile jars. Process in water bath canner for 10 minutes. Makes 14 pints

I grow the sweet peppers and I have found that epsom salt 2Tblsp to gal water. They do best when the weather begins to cool all the way to first frost. I cannot afford the ones from the store @ 1.49 a piece so I grow green thru summer starting some late for the fall.
Opa always made fried green B.L.T.s just slice the green tomatoes and fry them on THE SAME pan at the same time as the bacon. NOTHING better. Hope you enjoy.
WOW, Bev that looks yummy. I like this very much, I would leave out the hot peppers, but for me I do not care for anything spicy hot from peppers, now horseradish yes, I like that, I was laughing so hard from the beginning, about chocked myself. LOL Thank you dear.
My Brother and sister were up for a cuppa tea and some home canned goodies..when we get together it's like we were kids again! There are 5 of us all together!
There is an approved version of this recipe in the Better Homes and Garden Complete Canning Guide. I found this last year after she made this. She actually adds more vinegar and Lime than is called for so it is safe.
