Chicken Al-Faham Recipe:
Whole Chicken - 1 no (around 1-1.2 kg)
1st Marination:
Curd - ¼ Cup
Salt - 2 tsp
Black Pepper Powder - 2 tsp
Ginger Garlic Paste - 1 tbsp
Lemon Juice - 2 nos
To Roast:
Green Cardamom - 5 nos
Clove - 6 nos
Coriander Seeds - 1 tbsp
Cumin - 1 ½ tsp
Fennel Seeds - 1 tsp
Dry Kashmiri Chilli - 6-8 nos
To Grind:
Tomato (roughly cut) - 1 no
Onion (small-sized) - 1 no
Coriander Leaves - ¼ Cup
Green Chilli - 1 no
Ginger Garlic Paste - 1 tbsp
Oil - 1 tbsp
Other Ingredients:
Oil - 2 tbsp
Cooking Instructions:
1. Cut the breast bone of the chicken. Make a slit halfway through the chicken breast to flatten it.
2. Make slits all over the chicken for the masala to coat well and cook quickly.
3. In a bowl, mix together everything for the first marination. Apply it on the chicken and allow it to rest in the refrigerator for at least 30 minutes.
4. In a pan, dry roast the spices on low heat until aromatic. This will take 3-4 minutes.
5. Once it slightly cools, grind it into a fine powder.
6. Add the other ingredients and grind it into a paste.
7. If there is any moisture released from the chicken, take it out and discard it.
8. Apply the marination to the chicken. Refrigerate it for at least 2-3 hours.
9. Place it out of the fridge at least 30 minutes before cooking. Heat oil in a pan and place the chicken (skin side down). Cook on medium heat for 10 minutes on each side. Keep brushing with oil occasionally.
10. Cover and cook for 15-20 minutes on medium-low, and flip it halfway through.
11. Uncover and cook for 10 more minutes. Keep flipping it and brushing the chicken occasionally. Once cooked, remove the chicken from the pan.
12. Place it on a grill or wire rack. Cook it directly on the flame on both sides until it starts to brown and turn charred.
13. Serve it with garlic mayonnaise/toum sauce or hummus.
