I started grilling 10 years ago after I went to a cookout. 2 guys cooking on 2 different grills. One was overcooked with great seasoning(toothpicks were needed). The other one was cooked perfectly but was bland. So it pissed me off, and I started learning how to cook them. 1st grill was Kingsford grill. 2nd is the Weber Performer, which is my go-to, but when I need 4 or 5 slabs, a lot of the surface area is gone when I want low and slow. Now I want to buy an offset, but it has to fit in my SUV just in case I need it. Sometimes I don't want hot and fast. I want chill mode ribs. Start em early, check em every few.

I have had two Char-Grills. For the price they're pretty good. For the first few years of grilling everything was "Cajun" meaning burned and overcooked. It was until I started learning from BBQ videos on YT that I started cooking good. May your BBQ always be smoked to perfection!

Great video, I didn’t start grilling until I was older. I started with the Weber also. I appreciate your honesty and candor about being a family man. Grilling is a challenge but once you get comfortable it’s rewarding. We serve a Great God and He appears to have Blessed you abundantly. God Bless, your chicken looked great.

Hey Keith, I didn’t really grill much growing up. It wasn’t until a few years ago that I started grilling some on a little Weber tabletop kettle, but still not often. A couple years ago I was given an Oklahoma Joe Rambler grill / smoker, but still didn’t use either a lot. But this Fall I really wanted to be outside grilling and even have smoked some chicken a couple times. Now I want to grill every night.😅

Fall grilling is great. Not too hot outside. I could grill every night as well. Never too cold or late too fire up the grill…lol. Appreciate you brother!

Those quarters are on point. I've been grilling every since I was in my early 20s and now I'm 50. I started out not as serious about just something to do around the Fourth of July it wasn't until I was around 38 that I really got into after watching some of the barbecue tournament show. I the Char Griller line of products but I have used others as well, right now I have 2 Char Griller barrel style grills and I can witness as to how they will grow on you. Thanks for sharing 👍

Thanks for the video and I started with a webber kettle 22 that was my go to and still is I want a bigger grill but not sure what kind yet I started grilling when my dad built is own out of a old drum dad would get it started and have the meat on and walk a way well when he would walk back ill would be on it lot of good memories. Also Thanks for the speech to man I know how it is to I also wear a bunch of hats to I hunt fish grill work on my old truck and help my dad when I can plus be a husband a dad a brother and grandaddy so I know how you feel keep ya head up man and that grill hot peace

Hey what's up Keith; my name is Tim Williams. Thank you for sharing your experience with Grilling. Both of my parents and brother are deceased. I have Have 5 sisters plus one on my dad's side. I'm a dad, a brother and a uncle. wearing many hats and I understand what you're saying. This is my first time watching you Barbeque Chicken Leg Quarters and Baby Back Ribs. I never had a Weber Kettle Grill, but a brand similar to the 22in. Kettle Grill and it got the job done. Keith have you ever barbecue Bone in Chicken Breast? if so please please let me and do you do it the same way like you barbecue Leg Quarters? l look forward to receiving your response as well as Barbecuing. Hey Tim. Thanks a bunch for stopping by the channel! With Bone -in Chicken Breast, I'd season it the same way I do my leg quarters. I'd just set-up my grill a bit differently. With chicken breast, you got to be careful not to overcook them and dry them out. I'd put all the coals to one side of the grill (like you're setting up to cook indirect). I'd sear the meat over the coals for the first 5-10 minutes to get lock in moisture and get some good texture. Then, position them opposite the coals and cook them indirect the rest of the way. I would probably add a hickory chuck (or your favorite wood) to the charcoal for the extra smoke and flavor. Man, my mouth is watering as I type this....lol. Definitely give it a try and let me know how it turns out. Appreciate you brother!

I started my smoking journey with a pellet grill. I love it for ribs, but it just lacks in everything else. So I bought a Weber kettle. It’s been eating my lunch. Food has turned out, but it’s definitely a learning curve.

Great video,I to have a large family, love my 20-in akorn kamado .but when cooking for friends and family is tough.my friend give me a offset Char-Griller only used once or twice ,I can't wait to have one cook to make everyone have a full stomach, and me to have more time with my family

Excellent video. How do you stop the skin from being rubbery? Leg quarters is only chicken I have problems with the skin

Thanks! There's a couple of things I do that help avoid rubbery skin: 1) coat meat with olive oil to help browning and crisping of skin, 2) Use direct heat to help render fat and begin crisping the skin 3) Grill at higher heats... I like that 350-450 deg F range....you can always go indirect if needed 4) Avoid excessive basting and spritzing...this can add too much moisture and get the skin soggy. Hope this helps! Definitely let me know how your next round of leg quarters turns out.

Awesome video, good looking food. Save some money and buy a new smoker or grill in a couple years. You seem to have a passion for it and if you have never tried an offset with using mainly wood as a fuel source its fun, new, and will keep you in the hobby. Honestly, the weber kettle is one of the best!
