I have just made it. This was mind-blowing! An entire dinner comprised just this and I'm full! Had two quarters of sweetheart cabbage (aka pointed cabbage) and I was missing absolutely nothing. Perfect for my low-carb/keto diet too. Only had dried chillis, so sprinkled just before serving with some chili powder. I didn't feel any more oil was needed and next time I will half the amount of olive oil used to start with. Don't get me wrong, I licked the plate after, but I'm sure it would be equally as good with less of olive oil to start with. The garlic/chili/coriander olive oil was fantastic too!! Thank you SO MUCH for sharing this recipe. In 15 years of using internet to find recipes this is the first time I commented, because your recipe is THIS GOOD 🙏🏼🙌🏼
What a wonderful video and recipe. I would side with butter camp when cooking cabbage in particular, since it already has a strong vegetal taste similar to what olive oil brings to a dish. Both are great but I think butter really shines with fresh vegetables.
Chaya, I can’t grill inside. Surely the cabbage can be roasted or oven-grilled. I would serve it on a bed of cold yogurt with lime zest (or burnt lime powder?) mixed in, and with crumbled feta and toasted pine nuts on top.
Sounds like subbing Savoy may be my best here in small town suburban US - should I blanch? And can't always get Savoy, either - if using either Savoy or regular old round cabbage, what cues should I be looking for re. blanching time (floppiness, etc 🙂)? I love this flavor profile & want to try to do your recipe honor!
You can use either savoy or white cabbage here. Blanch it for about 30 secs in boiling water than transfer to ice water to cool. Drain and continue as per the recipe. We hope that's helpful!
