Guan Guan Cha (罐罐茶, Guàn Guàn Chá, "Jar Jar Tea") - Produced from the Tái Chá cultivar of tea plants native to Shiqian, Guizhou, Guàn Guàn Chá is a folk style of tea that was traditionally cooked before being sun dried, similar to Pu‘er. The resulting máo chá 毛茶 ("Hairy tea" - loose, dried leaves) is stored in clay jars (jar is “Guàn” [罐] in Mandarin, which is where this tea gets its name). It is hung from the rafters of the kitchen and aged, sometimes for decades. Fermenting in the humid environment, it gradually turns from a green tea into a fermented Hei Cha. Guàn Guàn Chá is boiled and consumed for its medicinal properties. Our version is a fresh batch of Guàn Guàn Máo Chá, harvested in late spring when the Tái Chá leaves begin to turn purple, from Xiang Ge’s certified organic Tái Chá farm. We were unable to secure an aged batch of Guàn Guàn Chá that we could ensure the quality of, so for now we are enjoying the fresh one. This informally-processed tea is a green tea in the same capacity that Sheng Pu’er is a green tea, except that it is made from Tái Chá plants rather than large-leaf Yunnan Pu'er plants. It’s flavor is smoky, strong, and slightly bitter, not unlike a purple Sheng Pu'er. We’re excited to see how this tea changes as it ages...

Finally another Tea Sketch!!! I've been waiting for a niche type of tea like _Guàn Guàn Chá_ to be taken up on this series!! I'd love to see a white tea, or a purple tea next.

Made my way here from the Whiskey Tribe! I love your expertise in taking apart and experiencing whiskey and it just so happens I have been moving into tea as well for a number of years. I, however, don’t typically gravitate towards more eastern teas (not that I am against them, just that I hang more with the Lebanese/Turkish crowd). I prefer Middle Eastern teas and herbal/floral tisanes. Do you foresee yourself explaining more middle eastern/african tea culture in the future? Just curious! I appreciate your insane knowledge and I really want to explore even more of tea because of your amazing videos.

Here from the Whiskey Tribe video today! Looking forward to learning more. Completely unrelated but what are your feelings on infusing tea into something like milk or cream and using the result to making a custard/dessert? Is that blasphemy?

@@TeaHouseGhost Any particular tea you think would be a good match in a basic custard? Obviously how the custard is being served and with what would greatly impact a pairing choice but just assume the custard will be consumed solo.

@@CookinWithSquirrl hmmmmm tough question - by itself a wuyi or phoenix oolong would make for a really unique custard. Something like Pin Pei Yan Cha or Honey Orchid. Or if you want a lighter, Springer thing, then maybe a green tea like Taicha Maojian or an Anxi like Root Mountain.

@@CookinWithSquirrl I’ve had a dessert with a genmaicha infused cream before and it was incredible! The roasted rice flavor came through really well but you still got that earthy grassiness from the green tea

For Guan Guan Cha, not terribly long. If you want to learn more about how to cool your water, I recommend taking So-Han's Intro To Gong Fu Cha class! West China Tea should have a video version available soon. Like maybe the end of the month?
