Cuy - Guinea Pig, is a popular item in Ecuador, Peru, and Bolivia found and eaten in the Andes mountains. It was been part of the local cuisine for hundreds of years. It has a taste similar to chicken or rabbit and is often roasted in an open grill or flattened and fried.
While this dish might not be for everyone, it’s a high protein, healthy item that dates back to pre-colonial times.
