Gumbo recipe My recipe is tripled so adjust as you need too Family pack of chicken boiled set aside the stock Shred the chicken 8 cans of tomato and okra Salt and pepper Little sugar Tony Chachere's Roux (homemade or jar) In a stock pot add: 12 cups of chicken stock 8 cans of tomatoes and okra Salt and pepper to taste Tony Chacheres to taste Sugar optional Simmer while you prepare the roux Roux is 1:1 ratio Melt shortening add flour stir continuously until dark like Chocolate (don't let it burn) Add to gumbo by spoonfuls Simmer for a couple hours Serve over rice and/or cornbread It's always better the next day

I’m from the UK and I’m in awe at what you guys can get pre-made in the US: chicken stock 😂 (I know yours was homemade), tomato and okra 🤔, Tony Chachere’s 🤷♀️, roux in a jar 😮 and lastly cornbread in a can 🤯. Us Brits are in the dark ages as far as availability of “exotic” ingredients so when I made this it turned into Chicken Soup! 😂 I love to watch your cooking “adventures” and marvel at your amazing ingredients 🥰

Great job Kim. So many people think making a roux is difficult. It really isn’t. It’s just making your thickening agent and simmering it plenty long to get the flour taste out of it. It’s the same when you make milk gravy from the grease after frying chicken. Your gumbo looked great. Congrats.

I have been using jarred rue for years which makes a wonderful dark gumbo. After you sauté the trinity (onions, celery and bell pepper) you simply add the roux and stir good. I then add my chicken broth, diced tomatoes, chicken, andouille sausage, okra and seasoning. For years my Cajun dad did not know I used jarred roux. It is a life saver.

I am from south Louisiana and gumbo is the go to when it gets cold… chicken, okra and sausage gumbo is the best! We never put noodles in it, serve over a small amount of rice… and don’t forget the potato salad! Yummy!

Tip from a soul food RU-vidr that I follow - You can make a large batch of roux and keep it in the fridge. Just grab a scoop of roux whenever you want something thickened. So simple and easy.
Kim I learned to make roux in the microwave in a microwave safe large casserole or measuring cup and so much easier than standing over stove. Stir every few minutes instead of continuously. I make one big batch and refrigerate it in jars to last for a while even if I can run to store and buy it. Try making it with just chicken and sausage and leave out the okra. Yum!

Good job! it always feels good when you try something an it turns out and sometimes you end up with a happy accident lol. did you use any spices or just let the veggies and stuff blend? I would also say any recipe that your mom made when you were a kid an you haven't tried yet or want her to show you ...get out the list an start, I asked my mom to help me ( her sit an tell me as I do) when she got home from the Hospital after she rested up a little but before we were able to she passed, I did try to make first time I didn't like them but the second was good brought back memories. I made up enough so I could put a few in a small brown lunch bag for each of my siblings an took them to their house during covid lock down just so they could think back at hopefully happier times or at least remember some of the good treats mom would once in awhile. When making chicken broth have you ever tried adding all the bones (breaking most). Also great with turkey. The bones pieces seem to add such a feeling of health to body. Cloth straining it at the end
