Basic stew chicken recipe, that can served with almost anything.

Haitian Spice:
green onions
garlic
parsley
black pepper
blend all the above ingredients together for that spice
*ALL OTHER INGREDIENTS LISTED BELOW:
Chicken
lime
parsley
thyme
tomatoes
Maggie cubes/chicken bouillon
jalapenos
cloves
lime juice
oil
tomato paste
water
salt to taste

I bought all the ingredients and made this with brown rice and better than bouillon chicken base (a healthier alternative to maggie) and OMG. It taste nearly IDENTICAL to Haitian chicken stew I ate my whole life! It was so good I couldn't believe I made it. And I had food for 3 days!! My food NEVER last that long. God bless you Lamise!

Hi Lamise! I live here in Miami and I usually just let my Mom cook when a crave authentic Haitian food. I'm so grateful I came across your channel since my family and I will be relocating to a state where there is NO Haitian food. I plan on learning from your channel. **Haitian Stew Chicken Recipe** ### Ingredients: - 1 whole chicken, cut into pieces - 1 tablespoon Haitian seasoning - 2 Maggi cubes or chicken bouillon - 2 tomatoes, chopped - 1 bunch parsley - 1 bunch thyme - 1 jalapeño - 15 cloves - 1 teaspoon lime juice - 3 cups water - 2 cups vegetable oil (for frying) - 2 tablespoons olive oil - 1 tablespoon tomato paste - 1 teaspoon salt (adjust to taste) - Additional 1 teaspoon lime juice - ½ cup water - 1 onion, sliced (optional) ### Instructions: 1. **Prepare Chicken**: In a bowl, rub the chicken pieces with 1 tablespoon of Haitian seasoning. Crush 2 Maggi cubes or chicken bouillon and sprinkle over the chicken. Mix well to coat all pieces evenly. 2. **Prepare Herbs and Jalapeño**: Tie the parsley and thyme together with cooking twine. Poke about 15 cloves into the jalapeño to prevent them from getting lost in the stew. 3. **Combine Ingredients**: Add the chopped tomatoes, the bunch of parsley and thyme, and the jalapeño with cloves into the bowl with the chicken. Pour in 1 teaspoon of lime juice and 3 cups of water. 4. **Cook the Chicken**: Transfer the mixture to a pot. Set the stove to medium-high heat and cook for about 45 minutes, stirring occasionally to ensure even cooking. 5. **Remove Chicken and Reserve Gravy**: Once the chicken is cooked, remove it from the pot and set it aside. Pour the remaining gravy into a bowl and keep it for later use. 6. **Fry the Chicken**: In a separate pot, heat 2 cups of vegetable oil on medium-high. Fry the chicken pieces until they are golden brown. Be cautious to avoid splattering. Remove the fried chicken and set it aside. 7. **Prepare the Stew Base**: In the same pot used to boil the chicken, add 2 tablespoons of olive oil and set the stove to medium heat. Add 1 tablespoon of tomato paste and stir for about a minute, ensuring it doesn't burn. 8. **Create the Gravy**: Add a portion of the reserved gravy to the pot and stir until thick. Then add the remaining gravy, mixing well to create a smooth sauce. 9. **Combine Chicken with Gravy**: Add the fried chicken pieces back into the pot with the gravy. Stir well to coat the chicken with the sauce. 10. **Adjust Seasoning and Simmer**: Taste the gravy and adjust the salt if needed. Add 1 teaspoon of lime juice and ½ cup of water to the pot. Let the stew simmer for 10 minutes. 11. **Add Onions (Optional)**: If desired, add sliced onions to the stew for additional flavor and presentation. 12. **Serve**: Once the stew is done, serve hot with your choice of side. ### Tips: - Use cooking twine to bundle the parsley and thyme for easy removal. - Cloves poked into the jalapeño prevent them from dispersing in the stew, making them easy to remove. - Be cautious when frying the chicken to avoid oil splatters. - Adjust seasoning to your taste before the final simmer.

My family and I lived in the Central Plateau area of Haiti for almost 2 years, and we love Haitian food. In fact, Haitian food is what my kids want for special occasions, such as birthdays. :) I am planning on making this stew along with diri ak pwa and bannann pezi for my daughter's birthday meal. :)

Essentially where you have multiple steps for "shode"-ing (basically flash boiling the chicken to kill bacteria and remove excess lemon /vinegar from the cleaning process) the chicken, creating a stock and then using the stock to create a sauce for stewing the previously friend chicken in. You can skip some of that process. First I don't shode separately from sauce making it happens in the same pot. 1) shode chicken before cooking ..but after cleaning (just to turn it white instead of translucent). After shode-ing I massage the chicken with the epise and then let it marinate in the fridge for at least a day (I like my flavor to the bone!). The next day I continue cooking. 2) add oil to pot and turn up heat. Throw in the shode'd chicken and fry it as you did until it gets a nice golden brown color on both sides. 3) Add in tomato paste (I usually rub it on the browned pieces of chicken directly)...then I add in water (sometimes I mix this with a spoon or two of the epise plus a spoon of tomato paste to make it reddish). I put enough water to cover all the chicken. Then I cover and let the chicken continue to cook for about 25 minutes. 4) I check the chicken and make sure it's cooking down to make a good sauce when the 25 minutes are up I go ahead and add my vegetables...usually one chopped onion and two bell peppers for the classical treatment but one can do this with anything. Spinach , green beens , kale , mixed greens anything. Then I let those cook down for another 7 to 10 minutes. 5) I cook down the sauce and chicken and vegetable mixture until it has the right look....usually around this point I taste it to make sure it had the right amount of salt (I tend to add my salt in the epise but sometimes it is not enough). Then I turn off heat and let rest for 10 to 15 minutes before serving!

diouranke they do actually. There a Haitian market in Miami that has already prepared epis in jars but I'd recommend making your own cause not everyone's epis taste the same. You might not find it to your liking
