Here in the Midwest we eat pork steaks all the time. Lots of Latino markets have them cut thin and in a marinade to cook quick for tacos. I like them medium to thick and put together slow cook on grill or smoker. Best piece of pork from the hog. They make good smothered steaks too. I'm Midwest we have a bit of everything.

Just a suggestion on fire starting with gas. If you put the gas into an empty can under the wood it will start a good fire without the flash that burns so many people . Just a safety tip I've learned over the years :)

Pork steaks are Absolutely Delicious! I like to sear them on both sides and then put stuffing on top and finish it either in the oven or the smoker! That Little Black Piglet was Cute but would have mighty tasty! God Bless from Caldwell Ohio!

Gabe, nothing beats a good grilled pork steak . Used to eat them all the time and still do. Open coals with oak or hickory, doesn't matter. Seasoned up with Everglades and a good char on the outside. Throw in some collards or swamp cabbage with corn bread on the side with plenty of butter.

Our grocery stores sell ham steaks not the same thing as you cooked, the ham part of that says it all they only need to be warmed up! But easters I get a nice looking pork shoulder and do a low and slow yum use honey to get the outside a bark always juicy and tender
