Italian Handvo :
Recipe -
Ingredients:
- Rice: 1 Cup
- Chana Dal: 1/2 Cup
- Toor Dal: 1/4 Cup
- Urad Dal: 1/4 Cup
- Fenugreek Seeds: 1/4 Tsp
- Broccoli: 1/4 Cup
- Black Olives: 1/4 Cup
- Pickled Jalapeno: 1/4 Cup
- Fresh Jalapeno: 1/3 Cup
- Oregano: 2 tsp
- Chilli Flakes: 2 tsp
- Mixed Herbs: 2 tsp
- Olive Oil: 1/4 Cup
- Salt: 2 tsp (or to taste)
Method:
1. Soak all the dals and rice overnight (6 hours) and then grind them. Allow the mixture to ferment for 6 to 8 hours.
2. Once the batter is nicely fermented, it is ready.
3. Blanche the broccoli and cut it into pieces.
4. In a bowl, mix the fermented batter with the herbs, olives, pickled jalapeno, fresh jalapeno, broccoli, and salt. No need to add any soda.
5. Mix well.
6. You can make small roundels or use a kadai. Spread olive oil, olives, jalapeno, and batter. Cover with a lid and cook on medium-high flame until crispy.
7. Flip and roast the other side until nicely crisp.
8. Serve with basil oil and pesto sauce.
Basil Oil:
Ingredients:
- Basil leaves: 200 grams
- Olive Oil: 1/3 Cup
Method:
1. Take a mixy jar, add basil leaves and olive oil. Grind until well combined.
2. Sieve using a muslin cloth over a strainer and press to release the basil oil.
3. Your homemade basil oil is ready.
Pesto Sauce:
Ingredients:
- Basil: 1/3 cup
- Garlic: 2 cloves
- Walnuts: 4 pieces
- Parmesan Cheese: 30 grams
- Olive Oil: 2 tbsp
- Salt: 1/4 tsp
Method:
1. Take a mixy jar, add basil, garlic, walnuts, cheese, olive oil, and salt. Blend to a smooth paste.
2. To prevent it from turning black, add 1 ice cube and spread a little oil on top.
3. Store in an airtight container and cover with cling film.
