During our October 2023 trip, my partner and I were lucky enough to snag seats at the Narcoossee's lounge/bar for some food and drinks, and so of course we watched Happily Ever After from the Narcoossee's deck. The restaurant is fairly small so I didn't feel the deck was overcrowded at all (it's nothing like, in my experience, the crowds that go to the California Grill terrace). I leaned up against the railing and took this video to preserve the memory.
I had never seen fireworks from the Grand Floridian before, and I think this is a very good spot for outside of the parks viewing! And if you don't want to deal with Narcoossee's ADRs (or getting lucky with bar seats being available), then you can go to the boat launch at Grand Floridian for pretty much the same view.
