Jared makes me cry more than the movie "The Notebook" does! Geesh! LOL ..I love how emotional he is and how he just pours out his true feelings. Not many men do that and that is one thing I admire about Jared. Ellie I know you know this but you truly have a wonderful husband who absolutely adores the ground that you walk on.

Ellie! I loved the end where Jared was talking about praying for you. My husband did the same thing, only he wrote me letters! From YEARS before we even met. I have close to a dozen letters from him including one right after we first met and it starts with "I think I met you today" I will forever cherish them and love that Jared prayed for you! Love the videos, you brighten my day EVERYDAY!

Ellie you are not crazy!!! They are crazy for not appreciating Salt on Watermelon! It is a well known fact among all watermelon connoisseurs that salt enhances the juices and sweetness flavor of Watermelon! Salt makes watermelon taste sweeter by creating a salty sweet contrast that allows the sweetness of the melon to stand out. Watermelon often has a subtle sweetness to it because so much of it is water, unlike a strawberry or other fruit where the flavor seems to be very concentrated and intense, so giving the sweetness a bit of salt to stand up against makes it seem much bolder. Salt also makes you salivate, which will make the watermelon seem even juicier than it is on its own. The trick to success is to only add a small pinch of salt and to evenly scatter it over the whole piece of melon. If you add too much salt, you’ll drown out the melon’s sweetness and you’ll have to start over with a fresh piece.

You guys are amazing and I cannot express how much I respect that you guys are following your dreams and just loving life! It was a risk but with your families support and your positive attitude you guys are doing it! HAPPY BIRTHDAY ELLIE...you really are one of the best Moms I "know" lol I think it takes a special person to be so patient with their kid(s) and you totally pull it off! I know it is not easy but since Jackson has been born you have made a conscious effort to exercise patience and that is something alot of parents do not think about and the first thing that goes out the window when something stressful happens. Anyway, I hope you had a great day! I love your whole family but my goodness little Olivia just has the best heart! So kind and sweet...OH and my mom puts salt (or used to before her health prevented her from eating very much of it) on her cantaloupe and watermelon :)))

I also salt my watermelon as well as pineapple and cantaloupe! I don't know why, but I feel like it makes the watermelon and other fruits juicier and more flavorful! Plus the juxtaposition between salty and sweet is just so delicious!
