Hey Tim, you’re a Floridian and I’m a Mississippian and our summers here are just like Florida. Our camper is also a 30amp with a 15,000btu A/C. We learned to also put an oscillating fan in the living area and one also in the bedroom to help the A/C and to keep the inside cool air moving.
Tim, I think you need to close the a/c vents on the main unit to get enough air pushed back to your bath/bedroom area. Only use those big main vents when you want to cool the main living area quickly. When you go to bed, you might even want to close a couple of the other small vents to push more air back to the bedroom. Just a suggestion…love your content. Crush it!
Tim, I have a one-year-old Microlite 21 FBS, which is two models under yours. I did one big trip in it so far. Check the outriggers underneath your trailer. All 8 of mine were very loose, almost loose enough where I could back them out with just my hand .I put Loctite on them and ratcheted them tight.
Hey Tim- For generator longevity burning gasoline, always add Stabil stabilizer at time of fuel purchase to keep the carburetor clean. It’s cheap insurance especially during emergencies when you want the generator to power up without issues.

See if you can turn the electric tongue jack sideways and then you can put your tailgate down? Some of those 3 bolt pattern can be turned, your switches would just be on side instead of on front?

Tim, I have (2) Powerhorse 7500 watt generator/investors from Northern Tool. Got them on sale for $1999 each. They are quieter than the 5000 watt Honda. Just using one of them I can run my 5 ton home A/C with a easy start and (2) freezer with a lot of lights. I wanted to run everything in my home so that’s why I purchased to and hook them together. They have ran flawless for the last 2 years. A lot of food trucks buy these because how reliable and quite they are. Not knocking Honda, but I picked both up for $1k less than a (1) 5000 watt Honda generator. Good luck!
Installed a soft start on my camper AC and can run my 15k BTU AC with a Champion 2k watt inverter generator. I run 2 in parallel if more power is needed. Never any hair dryers though!

There’s a good chance you can turn the head of your tongue jack sideways and full open your tailgate. There are several RU-vid videos on how to do it. I did my and my tailgate will full open while I’m hooked up.
Tim, You should have an electrician upgrade your home base electric source for the new trailer. I think the one you have is only 20 amps, you likely need a 2-pole 30 (or 50) amp service for your camper. Its worth the investment to provide adequate power for the trailer and to reduce the risk of overloading the existing electric circuit.

Not really good RV etiquette to: extend you slides, pull out all your stuff, run your APU as you film your horse and pony show, while stoped at a rest stop. You can bump out a slide a few inches for some space. stealth, in and out, low profile, touch and go.
