I ate here this evening. The food is as good as it looks in the video. Even though I don't speak Japanese, I still managed to chat with the owner using Google translate. Very friendly guy. I'll definitely return if I visit Fukuoka again.
I thinks the second to third yatai generation cooks should be given the top selling spots where they make the most money to keep the tradition alive they deserve it they work so hard the top spot selling areas should go to them by the yatai bosses

IMO, setting up shop like this every single day is impractical. 2 hours plus to set up and break down each time? Why not just have a food truck? You can still add stools, curtains, etc. but most of the components are already set up that way.
