Start your timer and start pouring your 50ml immediately give it some seconds to drip when the timer hits 30 seconds start your second 80ml pour and give it some seconds to drip When the timer hits one minute start pouring your third pour(80ml) and give it some seconds to drip When your timer hits 1min 30sec start pouring your fourth (90ml) pour. On your weigh scale side the total weight should read 300 Wait until the timer hits 3 minutes and your coffee should be ready
Your grind size determines the temperature of your water... The finer it is the lower the temperature and the more course it is the higher the temperatures

Am sorry but the bad taste you getting the solution you may need to adjust the grind size coarse if you are using very fine am for total brew time not above 3:30sec if it doesn’t work then the problem is with the roast profile of the coffee beans
Alright I understand you now…so under what circumstances should I or may a barista change the grind size of the coffee beans while making any manual brew
