Harvest and Preserve Cabbage | Canned Coleslaw + Sauerkraut

Today is the day we harvest our large Alaskan cabbage grown under the midnight sun, weighing in at 37 pounds leaves and all! We work to preserve our abundant garden harvest through fermentation, pickling and water bath processing.
~ Canned Coleslaw Ingredients ~
Sliced Red and Green Cabbage, Carrots, Beets and Kohlrabi
~ Canned Coleslaw Brine ~
2 parts vinegar (of your choice) to 1 part water
Sugar as desired
Peppercorns, brown mustard seeds and celery seeds
~ Canned Coleslaw Instructions ~
Sprinkle kosher salt over vegetable mixture, allow to sit for 1-2 hours then rinse well and drain.
Heat brine ingredients and prepare canning jars. Each jar needs approximately 1/2 to 3/4 cup of brine.
Pack coleslaw mixture into jars, pour hot brine over leaving 1/2 inch headspace.
Lid and band jars, process for 20 minutes in a water bath canner.

@@royjohnson465 yeah because everybody can afford to just go pick up a piece of land. Please be sensitive to the needs of others and realize that other people may not have it as good as you do to where you can just look around and wherever you feel like living. Some of us don't have it that good.

Please can I ask what might seem a silly question I always thought Cole slaw was a fresh unheated uncooked grated vegetable mixture with mayonaisse? Is your product soft and totally different from the Cole slaw I'm used to ?

you can go back and watch all their videos...but they store it under their cabinets and kitchen island,,,,they once made a root cellar but it held water so the filled it in...there are videos of it....just thought i would answer as im sure they dont get to all inquiries hope i helped...HAGD😃

It's the most incredible greedy/proud feeling to see all those canned goods lined up. I canned like a maniac this summer. The last thing was the best: dill and garlic green tomato pickles, omg I wish I'd canned dozens of pints more...but I just wore out. I regretfully committed the last half bushel to the groundhogs.

I made your canned coleslaw for the second year in a row. I used the green cabbage I got from my CSA. My son and I love it! We like it as is from the jar or with some mayo. So easy and yummy!💕

All I can say is "'WOW"!!! I live in BC near the Washington State border and can't grow veggies like you guys! Except my tomatoes are amazing! We have the heat needed for them.

Good Lord. I'm in Southern Spain and in this tremendous heat and poor soil and no rain for 7 months ,its quite impossible to grow vegetables of these dimensions. I feel like crying watching this,but I'm so happy for you guys.

I never would have imagined that cabbage could come in so wide shapes, but you had me salivating with the cabbage. For me I live to eat it with lemon, salt and pepper I could and have eaten a whole head by myself. I have also pickled cabbage, celery and radishes with lemon and salt it is delicious but it will curl your toes. 😂

i loved seeing the harvest and the huge cabbage. I plan on making coleslaw but i now plan on canning it so it all gets eaten since it lasts longer. The yummy crust meal at the end was such a welcome addition! i have a friend who loves😀 fermented hot sauce, i'm telling them to watch this for inspiration.

Initially, I thought the cabbage in the thumbnail was digitally enlarged-not in a malicious or deceitful way though. Such a wonderful cabbage harvest! The outer leaves are perfekt to make some ground meed Rolls out of it. Just pour boiling water over them,let tgem sit in the hot water for a few minutes and they geht nice and soft, perfekt to wrap some ground meet in them. The outer leaves are perfekt for those recipes 👍🏻

The OS cabbage leaves are awesome for cabbage rolls, we freeze many bags of leaves from that variety specifically for making them.

One thing I remember my mum doing for chickens was sometimes hanging a small animal carcass up in the chicken coop for the flies to get at. As the maggots develop they drop out onto the ground & feed the chickens. Your chucks are really well fed but I thought I’d mention the tip - my mum used rabbits but then we have a lot of them in Scotland. ☺️ Apparently it’s good to do at a fishing lake too over the water to keep fish close to your favourite spots but this I know less about. Your videos always brighten my day ❤️

I adore this video .. Was so excited in the garden while you were cutting the cabbages. N equally as excited the more beets n carrots you harvested.. Watching you process the cabbages, my mouth began watering so much thinking of the spectacular Cole Slaw and Sour Kraut.. I love both foods so much n they are so healthy .. The tomato pie looks like a rustic Italian savory Crostata, looks so good. You can also go sweet with fruit filling. Yum!!
