Harvest carp and tilapia after a year of rearing at the farm. Ana's catches the big ones and those that are not big enough will be released back into the pond and continue to take care of them.
how to make fish floss:
- The fish is cleaned of scales, left to dry and used ginger and red onion to reduce the fishy smell of the fish.
- the fish is steamed just cooked to retain the sweetness of the meat.
- Let the fish cool and separate the meat and bones, then mix it with turmeric powder (1g/1kg fish), seasoning to taste, then dry roast 80%, then let it cool and store it in an airtight container.
Ana's Smoked Fish Recipe:
- Fish is removed offal and drained, then mixed with salt, chili powder, and pepper, then marinated for 30 minutes or more.
- Fish after being marinated with spices will be smoked on the stove until the fish is cooked. (Charcoal for drying fish will also partly determine the aroma of fish. Ana's uses oak wood and galangal leaves. for drying)
