We make home made maple syrup from a DIY evaporator. We collect over 50 liters of sap into maple syrup at our small cabin in the woods. This is about making something delicious, from the land, using the trees around us. Liquid sap turns to delicious maple syrup at a ratio of about 40:1. Over the course of the season we will see just how much maple syrup we can make. To make 1 liter of syrup, we need to collect and boil down about 40 liters of sap. This takes a lot of time and patience to boil off most of the water to leave mostly sugar in the syrup.
Spring is really a great time to get outside and catch up on all the missed sunshine and get much needed fresh air and vitamin D from the sun.
We use the tractor this season to help us collect as well as a pull sled. Pails are cheap, and re-used from the bakery section at the grocery store.
We drill in holes in the sugar maples at an upward angle and the sap will flow anytime the temperatures change from below freezing to above freezing. The sap will stop flowing as the season wears on, so timing is critical. The sap starts off really clear, but will be richer and darker as the season goes on.
We filter our sap through a t-shirt, but you may want to use something finer like cheese clothe. We find that the extra stuff just enhances the flavor profile of the final syrup.
To make maple sugar, just keep boiling the syrup and it will boil off all the water leaving just sugar. Syrup forms at 220F or 107C and should be removed, cooled and then stored in tight containers. It can be kept frozen for a very long time, or refrigerated for a few months.
If mold forms, scoop it off and you can still eat it, but the flavor will be off.
Serve fresh maple syrup over pancakes, french toast, or just drink it straight up.

When I was a child I would go to my uncles sugar shack in Quebec. His maple syrup was always thicker and darker than what is sold today. But the French Canadians would make maple syrup pie when they had to much syrup. I also had poached eggs in maple syrup mix 50/50 with water.

been doing some boiling myself. Last weekend we ended up with 2.25L and this weekend 2.5l of finished syrup. We still have a ton of sap in the bush that was frozen into the buckets. That will be next weekends boil!

In the frozen north of Ontario . You can be charged $10To $15 can dollars for a litre . Where do you think you can get $50 a litre. When you start up the evaporator just a quarter fill it . Then once its on a boil pre heat the rest of the sap . Easy way would be to hang metal can in evaporator to heat up sap .

You two WILDMEN are offering another joyous video...and a SEASONAL ONE as well. MAPLE SYRUP needs to be evaporated over dead MAPLE wood. You got the 'smokey' taste right...can't be kept out of traditional boiled/evaporated syrup. BUT at artisan quality and price points, I don't want pine resin in my maple syrup. I could accept oak; not hickory--that is too valuable for bacon, ham and such. I spent most of my life in Upstate New York: lots of maple syrup was made in the Catskill Mountains and a bit more in the Adirondack Mountains. I have used the same supplier for decades, buying a gallon a year for my wife and I and more for our two sons and their families. I make certain milk puddings and coffee cake fillings with maple sugar. These things cost...but the touch with my family traditions and the flavor memories are 'priceless.'

I built an evaporator out of a barrel stove. I will gladly build a fresh new one and donate it if a company isn't smart enough to. (Mine doesn't work any better than what you already use though)

This is my first time making syrup from my maple trees. I had to boil it down in batches, but I think I may have reduced it too far. it's VERY crystallized. almost hard. I still have fresh sap. can I add that to what I have and fix it? I probably have about a quart of 'syrup'. it's really good, but I'd have to heat it to use it.

Yeah. Each five gallon bucket of sap represents a pint of syrup. That's what I tell myself as I lug two buckets up from the stand of maple down in the draw.

If you get mold on your maple syrup, you should scoop it off and re-boil the syrup on the stove for a few minutes.

The 'right' tip for saving maple syrup. We keep our main supply frozen (it is thick but it pours) and transfer into table jugs as needed. We use it regularly (not for special occasions) which is better than trying to recover poorly stored syrup.

I would encourage filtering the sap with a good filter like cheese cloth. It is worth the extra time and effort and the particles (dirt, bark, insects) do not really enhance the flavor any.

Question.... My wife always places an order with one of her friends who family lives in Canada.. for there Maple Syrup. It comes in a Factory seal plastic jug that Im assuming is done at there bottling station... How long will these last un-opened?? I ask because we still have one jug un-opened thats well over a year old??

Keep it cool. If it goes off, skim any mold and reboil. I have had stuff in the fridge for 2 years....but most only recommend a few months.

As a suggestion get a square water container large type that is in caged in metal has a top opening and a bottom drain Can hold probably 400 or 600 gallons can be used in combination with your small tractor with forks less containers makes it more efficient as a suggestion later on. 50.00 a litre c'mon man I think u can come down on that price I live in Michigan shipping will costs me a fortune. Please
