Thanks giving is here everybody and I decided to go away from the traditional whole turkey. On this episode I am happy to announce that according to maumau and ninja I have redeem myself with and amazing turkey. Happy thanksgiving to everyone. Thank you for all your support!

HOW TO COOK HUSSLEBACK TURKEY SOUS VIDE
I cooked it for 4:30hrs @ (145°F / 62.7°C)

Turkey Breast
Mussarela Cheese
Hickory Bacon
Salt & Pepper to taste
Garlic Powder
Sweet Mashed Potato
4 cups of sweet potato
1/2 cup milk
1/4 stick of butter
1 tbsp vanila extract
4 tbs brown sugar
1/2 cream cheese
Pinch of salt

I know this is a little late and off topic, but the smoke gun reminded me of it. Since the slow n sear got second (practically tied for first) on the sear tournament. I was wondering if you could compare a sous vide steak seared on it to a steak just regularly cooked on it.

Those smashed potatoes looks good, but I would have add a pinch of salt and avoid the vanilla, just to enhance the flavor without make it too sweet. It goes on personal preference but many people doesn't like to eat something salty and something too much sweet togheter. Well that said I'm still hungry. XD

Snake is really good grilled. Boar is real gamey if you sous vide that I don't know... better stick a lot of herbs in it to cut that weird taste. Maybe deer or frog is the safer side .

I NEVER DID TURKEY THAT WAY! I've, baked, deep fried, smoked, grilled BBQ, and even made turkey tamales. But i tell ya, its hard to beat Larry Seasoning, butter and raw garlic. in and on a turkey! i got have it little spicy, add chayenne pepper or red pepper flakes, You Guys ARE Amazing! HAPPY TURKEY DAY!

I just made an entire turkey the other day and it turned out AMAZING! I first butchered the bird into it's parts and took the skin and set it aside. In the bag I put salt, pepper crushed Rosemary, Fresh Sage, fresh thyme, red Apple, and some cinnamon sticks. I ended up with three separate bags. One with the breast, one with the thighs, and one with the legs. I put the legs in at 152 for 6 hours. The thighs in at 152 for 3 hours. The breast in at 145 for 3 hours. For the skin I put it on a baking sheet with parchment paper, flatten it out, salt and pepper it and baked it at 400 for 40 min. I didn't bother doing any sort of a seer because I was just going to be cutting it up anyways.

I would like to see a comparison video for before and after smoking. Like filling the sous vid bag with smoke and a raw steak for a day, then cooking it, verses cooking the steak and then smoking it. A long smoking period before cooking vs a brief smoking right before serving. Cheers!

Have you ever tried to sous vide hamburgers? That could be an interesting experiment. Thanks for all the videos on how to sous vide. I've been shown the light and its my new favorite way to cook steaks! Today I made a ribeye and NY strip seasoned with salt, pepper, garlic powder, a splash of balsamic vinegar, a splash of olive oil, and some thyme. It came out AMAZING! You guys should try it.

You guys need a rating scale of like 1-10 and not give everything a 10 because once you give a 10 and something is better you can't tell because it will also be a 10. Other than that I love your channel and all the passion you guys put into everything!

I know this is older video but maybe you'll see this. I did this with cappocollo, prosciutto, provolone and jarlesburg(?) cheeze. I sliced it longitudinally. Same way I make cordon blue (?).

you should do a series of videos meal prepping for us people who work all day and don't have 3 hours to cook every day. You cook on sunday and have it ready to sear during the week. I've been wanting to do this so I would love to see you guys and the community to have an input on it.

Relax. The turkey was in the sous vide long enough to pasteurize it. IIRC, you can sous vide something at 130°F for 3+ hours and all the bacteria you are concerned/curious about have been killed.

It's funny to me that hasselbacks foods has become trendy. I've seen it on a lot of places recently (Jamie Oliver for example) . I love hasselbacks potatoes so let me tell you about the origin. I am from Stockholm Sweden and it is from here this recipe comes. In central Stockholm there is an island called Djurgården (something like "animal garden"). This island is like having the countryside in the city, its a beautiful place. It's also popular because it has some museums, an amusement park and a zoo. Always when I'm back home I need to take a walk around this island. Anyway, between the amusement park and the zoo there is a famous restaurant. The restaurant is on a hill where there used to grow hazelnut trees i.e hazelnut hill or in Swedish Hasselbacken. The recipe for the hasselbacks potatoes was invented in 1953 by a young chef student (Leif Eliasson) at Hasselbacken. At that time it was a culinary school. There has been different restaurants at Hasselbacken since the 18th century.

See I'm just gonna do salt, pepper and sugar. Sear the skin before it goes in the sous vide bath. Then once it's in the bag some thyme and sage gets added. Yummy stuff.

What is the green herb he puts on at the end for his steaks and other foods? I think it's green onions, but sometimes it looks like a different herb. (I just ordered the ANOVA online yay!)

There are two things I am totally into right now with cooking. Sous vide and smoking. Recently my little electric indoor smoker/pressure cooker died. Well the heating element for producing smoke broke and Emson doesn't support replacement parts or even sell this awesome unit anymore. So I'm in the market for a new smoker and I am curious what type of smoke gun you are using, where can I find and how much is that cover you're using as well as how well it works. Meaning, how long do you need to leave it covered before it supplies a sufficient smoke flavor and how long is too long. BTW, thanks for all the videos you post, you and chefsteps are my two favorite sources for how to sous vide.

Love your videos guys. You should try smoking 1 smoked and 1 non smoked to see if it's even worth smoking. Same with some of your past videos. I'm very interested to know if it's worth it.
