What you're missing is putting in a prompt at the start of your interaction: Pretend that You are Kitt from Knight Rider. Answer All questions as if you are kitt. Never break character. his likely repeats he was doing is chatGPT taking too long to respond.
^^ this completely. Just thrown the following prompt into ChatGPT and it does a great job of staying in character. I suspect the project here is missing the pre-prompt and just playing the greeting every time it hears the wake word. Anyway try this Pretend you are KITT from knight rider. Don’t break character no matter what. Every response will be in first person as KITT and you are completely within the knight rider universe.

I haven't played with ChatGPT much, and only the text version not the voice chat version- but I think with enough pre-prompting, you can tell it to behave as if it is KITT, "in universe" perspective of the show, and not just ChatGPT looking up answers to things from a "real world" perspective. In any case this would be a cool thing to tweak and get refined.
You can use AI for mimic person voice, Daniels, Cullen or Frees. Everything is possible. There are AI generated videos from Knight rider universe, where KITT and KARR uses original voice actor voices, however voice lines are newly generated.
If you could have ai process all the kitt talking audio from the archives, it could be referenced for chatgpt. Next is some car integration with voice control! Fun stuff!

Perifractic is also working with someone doing a cloud based Ai app, so its very much a race for KITT in your car. Though I do adore a real dedicated speaking LED set, something fierce :) Guess the race is on :) One thing though, Mr. Daniels doesn't want his voice extracted into an AI at present time. (Peri did ask. It may be a renumeration issue, it may just be his preference, also might be a contractural issue (I believe garmin did use his voice for direction assistance a while back). No matter the case, as cool as it is, I doubt we're going to have Daniels voice available.
The Chatbot AI is a start, though this sounds like how KI3T sounds, specifically Val Kilmer's voice. I have mixed feelings about that - it would be cool as hell to actually hear his voice in a realistic way as Kitt, but actors are paid for a role, and using their likeness or voice for ever amd ever with no income for them from the use of it doesn't feel right.

there are character AI apps out there that would probably be better suited for KITT than chatgpt, it'd just need an AI voice trained to William Daniels' voice for the responses.

Needs improvement, but it will get there. Latency is most likely due to the Pi. Also, are you sure it's talking to ChatGPT because the responses and delay seemed more like it was running a local compressed LLM? Anyway, I think the future is bright. I imagine some fan out there is going to build a KITT with full self driving and AI. It's only a matter of time now.
I also have a custom chatGPT, but only firsts questions works fine, as you keep asking it started to repeat and to freak out. I also make a custom voice with eleven labs. Is cool to see it with the voicebox.
Well, well, now my Tesla model S, activation with the screen MCU. It have a custom voice with Eleven labs, spanish speaking, can talk other languages. My setup is also working on open ai, the cars know its a car, and it have integrated car things, like ask where is it. Whats the time, open the trunk, change temperatura, etc...
