The recipe is very good but you should not use olive oil for cooking. Olive oil is highly nutritious but it has a very low smoke point ,so once it comes with heat contact it loses all nutrients, then there is no difference between olive oil , refined oil or any poor quality oil. If you want to get benefits then you should use Pure / cold press / extra virgin Olive oil only with salad or sprinkle on top of any cooked food. In fact 1tbs of olive oil every day is really good for your health. For any recipe which you are going to cook you should use ghee or any other cold pressed vegetable oil to make it more healthy.
