80% of cooking is knowing you seasoning and thier respectively result and amount. I don't mean oregano and parsley. The 'gateway' herbs. I mean cumin, cloves, paprika, cayenne. It's a double edged sword tho. My wife in no chef but the best dishes are the ones she makes up. She'll be like "oh, you like that, do you? Too bad. Because I don't remember what's in it"

i started watching when the pandemic started and somebody who dabbles in cooking i really appreciate how thorough and diligent with good kitchen hygiene (both actually washing of hands after chicken but also dry towel, clean station, prep bowl for larger scale cooking). reason why this channel is also amazing, i try to encourage my friends to cook, it's not about eating the best but having a very good life skill and understand what goes into your body. edit: also, fucking props for having oxo tongs, they are the best, accept nothing else, lol.

I’ve been inspired by all the cooking since COVID hit, that I bought kitchen scales. And you’re right. My god. They’re bloody magic. Best $10 I ever spent on a cooking appliance. They really make cooking so much easier.
I do a similar dish, known in our house as "A Pot Of Brown." Inspired by Aliens 3 - 'it's hot, brown and there's plenty of it." Sausages, whatever veggies are in the fridge, beans, stock, tomato paste etc - the simple theory being that all the ingredients taste okay on their own, so they shouldn't clash when put together. Cheap, filling, tasty and provides leftovers so I don't buy lunch at work.

I made this last night (excluding a few ingredients because I used too much of the vegies to fit everything in). It's SO GOOD. It's like chicken cacciatore, korean tuna stew, and a pumpkin masala had an ugly baby. All my favourite recipes.
I agree on the stainless bowls, I picked up a set of 6 when I was messing about with home baking during the pandemic for like 40 bucks, and they're the most useful thing in my kitchen.
So I actually have one of those knives being used to cut through rocks and what not that you spliced through the clip. My old man bought it in 1989 in the USA at a live demo in a shopping mall - the thing has been left unprotected in a draw and used by the family non stop since and bugger me if it isn’t still sharp!
I call this 'casserole surprise' because it comes out a bit different depending on what you chuck in it, but it's always good. I flour the chicken before browning it off so it thickens the stew up a bit 😁
Ive made this, coming back to comment. so I went with a different approach woth the tomatoes since I used fresh vine ripened tomatos. I roughly chopped them and cooked them down, skin on with the ginger on a way lower heat. then added the veges. the rest was as you did it. Absolutely gorgeous recipe, though can't be too shocked, most of your recipes have rekindled my passion for food so cheers mate. love the content, keep it up and I'll defo keep watching.

This is exactly what everyone's weekly meals needs. The defridgerator and WTF needs this much ginger ("because the 600 g they found was as close to the 50 g I ordered with Woolies online"). Also, one suburbs worth of garlic is barely enough.

Hi Nat, thank you for your show and being you. I'm a huge fan. Regarding bay leaves... If you only have dried ones to work with, rub the undersides of them together to release the aroma. If you have access to fresh ones, you will finally see/smell why they are so special! They are truly an awesome aromatic. Cheers!
That looks a lot like the chili we make on a regular basis. Cans of beans and tomats, onion, peppers (both hot and bell), onion, garlic for days, browned off meat of cow of some sort, and spices, all cooked in some stock for ~30-45 minutes. We usually serve with rice, or cheese and Fritos, or... you get the picture. But yeah, lots of similarities here. Gonna make me some Heaven Blob soon I think. Of course, this is one of those dishes that would be better during winter months, which I know is rearing its head for you all in the not too distant future, but it's leaving us behind up here in the North. Oh well, if nothing else, then next winter, we'll be making this I'm sure.
