Step-by-Step Instructions:
(01:21) Step 1: Start by making the apple filling. Combine butter, brown sugar, apples, cinnamon, lemon juice, and a pinch of salt in a medium size saucepan.
(1:50) Step 2: To make the vanilla mousse, start by adding the heavy cream, sugar, milk, vanilla extract, salt, bloomed gelatin, and egg yolks into a medium saucepan.
(2:18) Step 3: Using a hand mixer, whisk the cream until stiff peaks form. Once vanilla mousse is fully cooled, fold it into the whipped cream.
(2:36) Step 4: Add apple filling to small circular molds. Place a bit of plastic wrap in each mold to make removal easier.
(02:44) Step 5: Now place the molds into the freezer. Spoon an even layer of melted candy melts on the inside of the mold. Then place it in the fridge to harden.
(03:01) Step 6:Start assembling the cakes! Pipe the mousse into the mold and place the frozen apples into the center. Place the cutout cake over the mousse and apples. Using the remaining candy melts, apply a thin layer over the cake. Place it in the refrigerator to harden.
(03:21) Step 7: To make edible leaves, cut out a leaf shape from the edible wafer paper. Paint a thin layer of green food coloring onto the paper.
(03:43) Step 8: Use the fondant to make Hello Kitty’s ears, nose, bow, whiskers and eyes.
(04:25) Step 7: Using a small amount of white candy melts as glue, put on Hello Kitty’s eyes, nose, ears, whiskers, and bow.
(04:39) Step 8: To make our cake, paint some red food coloring onto the outside in thin strokes. Attach a bit of black candy melt to the top of the stem as well as the green wafer leaf and we’re all done!
