Jack--you are amazing, and we all appreciate everything you do. You are providing a great resource for bakers--whether new, first-time bakers or experienced, life-long bakers. We look forward to every video you post, and we understand how much work it all is. You need to understand how much we all appreciate, respect, and love you and your work. If you can only do one video a month, that's just fine. Having a young family and being a good dad is the MOST important thing you can do, and although we love weekly videos, we understand that FAMILY comes first. We're bakers--by nature we are "providers" and "nurturers", and we have out priorities straight and you do to--we respect and applaud that! I think featuring the bread-making adventures of your viewers to boost your content is a FANTASTIC idea, and I really look forward to seeing what other bakers from all over the world is a brilliant idea. I lok forward to sharing this adventure with your wonderful viewers, from countries all around the planet! Keep up the good work--we love you and appreciate your efforts. Jack, a new subscriber here. I am a new sourdough baker ( have made yeast breads), and was getting so discouraged, until I followed your excellent video (#101). I am 70 years young and I must say that today I have made my 4th loaf in 4 days and every time I cannot believe how puffy and fluffy the dough is as I do my final stretch and folds! It is just delightful to FINALLY feel what I am working towards with sourdough. Thank you for your easy to follow directions and am looking forward to seeing so many more of your videos. They are game changers. Can’t get any rye now, but bread flour is working nicely for the dough and AP for the starter. Thank you!

Great stuff Jack. Loved hearing the stories. Feel you should maybe find a way to include people's triumphs and breakthroughs in videos going forward, as it adds to the inspiration of the content and provides a relatable element. My own wee story is that my wife became ill with Covid at the very beginning of March and I had to drop everything and focus on caring for her and my 8 year old son and 3 year old daughter. As a bit of an experiment one day we made a sourdough starter (kids love anything sticky and slimy!) I told them it would come to life and be our new pet so they would need to take care of it, secretly though I had massive doubts about it working. Long story short, we're now in July and have learned from scratch via your videos how to make sourdough, as well as other breads, and that starter has been shipped out to folk all over the UK as a result of my posts on social media. It has a wonderful sweet balsamic vinegar aroma and makes an incredible boule/sandwich loaf/pizza base/etc.. What an adventure it has been. The kids now make an sourdough mix on a Friday evening and bake sourdough cinnamon buns on a Saturday morning which are honestly incredible. Looking forward to your future content 👍

What a heart-warming video! I'm so glad to hear you are back. I'm one of those people who took up sourdough baking during lockdown, and though it was quite a struggle getting flour in the beginning, eventually I worked that out. I'm baking regularly now and just loving the whole process as well as the results. Sourdough baking is oddly one of the most empowering things I've ever done. Thank goodness for the Internet, RU-vid, and people like you who are sharing your knowledge. Your videos are among the ones I learned the most from. Sometimes I still go back and rewatch them. It's like practicing a skill virtually. So whatever you have the time and energy to produce I'm sure I'll enjoy.

Thanks for the update Jack. I was also getting teary-eyed!! You have been on quite a journey as I'm sure many of us have in these trying times. Because of your videos I also decided to retry making sourdough bread. I don't know what it but I have become obsessed with the process and feel such joy when I bake. One day in May...during the lockdown here in BC, Canada my neighbour came over to give me a dozen fresh eggs. I had just taken a loaf of sourdough out of the oven so I gave it to him. Now we make this exchange on a weekly basis! Thanks again Jack...wishing you and your family all the very best!!! P.S. My daughter has also taken to making bread using the starter I gave her as have three of her friends!!!

Thank you Jack! You are a ray of sunshine during dark times, I love your videos. My husband is now baking all of our bread and it is delicious. It doesn’t matter if you can’t put out a video every Thursday so don’t put that pressure on yourself, we will be patient and being subscribed means we will know when a new one comes out - and we can brush up on our techniques by watching some of the old ones in the meantime.

Oh my gosh, my heart is full up after seeing and listening to you. All the stories you shared are amazing and inspirational. Your integrity and compassion will serve you well and you understand what is important in life: people and love and caring and giving. It's you doing what you love and showing us, with empathy and understanding, how we can do it too. I discovered you a year and a half or so ago, got one of your "parcels" to help me along, and I got a new hobby and some awesome sourdough bread. You did that for me. Jack, great to see your smiling face and warm presence! I’ve been busy here in Texas working on the sourdough loaf baking you got me started on. Here’s a couple of things I learned and some random thoughts. First, I realized that while there is a “recipe” for sourdough bread, at its heart, it really has a level of art along with the science. Pursuing a better loaf has been not only an exercise in patience and perseverance, but it has helped me to understand the creative process. I can’t really express how important that is to a 62 year old woman who is getting ready to jump ship off of a very confining, defining and restraining 34 year career. You’ve helped me fan the little tiny ember of creativity inside. I very grateful. Here’s the random thought: don’t let your high expectations of yourself run you over...you are in charge here. When they start hounding you, tell them to quiet down and take a seat.

You deserve it lad. I made my first two Sourdough breads the other day which followed your recipe and procedures. Come the morning I pulled them out of the fridge, the two loaves that looked sad and flatter than expected. When they came out of the oven, they looked like shop window quality artisan loaves, and tasted amazing. Stay honest, down to earth and real and you will continue to deservedly do well.. Hello Jack, it’s good to see you. Two powerful words are “what if?” Go with whatever works for you, we will all be fine. I found you during covid ‘19 and now I’m baking sourdough on Saturday. I used to spend Saturday mornings with my sister, niece, and daughter at a restaurant for brunch. Now I have had to change my routine as we all have. Baking bread filled this void and on Sunday I share a loaf of bread by delivering to my daughter’s porch. Thank you for being you and sharing your talents with us 🥰

Hey welcome back! LOL I was on Zoom today with my grandson and there was a little Lull in the conversation so I decided to try to explain hydration. He's 12 and a half as smart as a whip so he got it right away. He actually went to camp 4 three or four years in a row where they had a little bread making station. So we would go to pick him up and bring him back with us until his mom could pick him up and he would have this little baggie of dough, which believe it or not actually baked up pretty nicely. He and his mom have totally been into sourdough since the lockdown. So it's all good! Looking forward to the next videos. Stay safe

Hey Jack. Good to see you. I get it, I really do. I started giving free English lessons to children in my village here in Hungary and after a couple of weeks I found the expectation really stressful. It occupied my mind especially in the days immediately before the lessons. The lockdown ended that but I might start again....So, do whatever you want, whenever you want. You will find you are more creative and that you will enjoy it rather than dread it. Must dash, sourdough in the oven 😁🤗

Hi Jack, Good to have you back! Just thanks for the learning path you offered. It’s nice for you, that you meant so much to a lot of people. Our homemaking bread story is similar. I used to make bread in a baking machine. Kids were always asking for ‘weekend-bread’ as we bought ‘soft sandwich bread’ from the grocery on Saturday. Now I’m baking weekly bread based on your recipes and my own imagination. Even a weekly sourdough batch in different variations, based on video 101 and later tips. During the lockdown all my kids and their girlfriends learned to bake their own bread. And last week I overheard a phone conversation of my wife: she bragged to her mom on the quality of my sourdough bread. I felt so fulfilled. Thx! As for the future of your channel Currently, I’m trying to make pizza-dough (it always sticks to the table ) and some French/Italian specialties (croissants, pistolettess, baguette, ciabatta etc.) Shining your light on these types of bread would be much appreciated. Son, don’t fret....keep balance in your life and your family first! Whatever you do....we will LOVE it! I bought someone else’s classes on Udemy, FAILED!!! I’ve got your recipe proving in the fridge now and it looks good. Will wait till bake but I think maybe you’ve given me back my sourdough mojo!!! I want you to produce and sell your wood “slider” peels. I can only find skinny baguette ones online. Love your stuff young man...thanks! Could you do something on varying flours in a mix? Like, some bread flour, some whole wheat, some rye.....or a seven grain sourdough...or mill your own? Maybe favorite tools?

I found your videos during our lockdown in Malaysia and a complete beginner in making bread. Recently ordered your bread scrapers thru my UK friend. All I need to do now is to patiently wait for her to return to Malaysia. I have learned so much about the basic of bread making from you. I am selling some of my bakes to friends but not ready to sell in a bigger scale yet (only 23L oven). Thank you for all your tips shared and fast delivery of those scrapers. Can't wait to use them.

Well done Jack. I now do not buy any bread and alternate between sourdough and wholemeal bread, my 3 year old loves it and loves to help me. i must admit i have a bread machine that does the kneading! Pure laziness. I also do not have a sealed oven so cook my sourdough in a crock pot or dutch oven if your american! Any advice on cooking in an oven with no full seal would be most appreciated, as when i cooked it out of the pot it just didn't rise enough.Thanks again from Kent

Your own life comes first of course and whatever you decide to do in video output I am sure will be fine with the vast majority of subscribers.
