😋 When my dad makes fried chicken, or anyone in my family for that matter, makes fried chicken, he uses a combo of corn starch and flour. He seasons it, sifts it a couple of times, then it's ready to bread the chicken.
@@dm7744 50 years experience cooking. I've tried many recipes of fried chicken over these last five decades. And buttermilk goes better in biscuits, not wasted on chicken. It does not make that much of a difference. I know it's not for the crunch.
When breading with flour with or without corn starch, try adding a dash of baking powder to the mix. That will lighten it up a bit and also increase the crisp factor.
I've never tried the corn starch in a fryer. I know that method makes them very crispy in the oven. Its football season so I'll be doing it up both ways! Thank you for the video
I double fry to get my wings extra crispy I make a sauce with Gochujang red pepper paste, ketchup, garlic paste, soy and honey topped with sesame seeds. ❤

Hi Chef MIH, This was so interesting what you did and yes.....I'ved tried both.....back in the day we did not do cornstarch.....so if you like the crunchiness go for it.....
That sazón is a MUST at our house and honestly it’s nice to see it used commercially since it has msg. But i feel like msg has a worse rep than it deserves. Side note: for my gluten sensitive folks, tapioca flour is a great alternative I’ve found for fried chicken and gives a nice crunch as well
I would have to try this recipe I never tried buttermilk for frying chicken, It looks good & delicious , the one's with cornstarch look better & the light color looks even better. 👍
My brother, I don't think the dredge(just flour or with cornstarch)really matters per se but the seasoning(s) must be on point. To crisp my chicken more I will brown it some on the stovetop then place it on a cookie sheet fitted with a wire rack and place in a 400° oven for 30-45 mins. It beats standing at the stove wondering if its done.
TRY BAKING POWDER instead of corn starch. Just teaspoon or Tablespoon of BP to the flour mix.. and then bake them 25 min per side. Before and when flipping them, brush them with evoo.
I do a combo of flour and cornstarch too, the crunch is Noticeable...a little cstarch goes a long way lol...I made a version of ur sauce with Thai chili sauce I'll post the results shortly
Imma need somebody to use some Badia Complete seasoning & Cavenders Greek seasoning ( yellow ) I been using these as my go too seasoning for 15 years now try them and you will not be disappointed

I've tested cornstarch vs flour as well, but I used flour vs all cornstarch. 100% cornstarch is the only time you get a noticeable difference. That's because it's lighter than flour. Play around with the ratio. Maybe 75% cornstarch, and 25% flour...
😋Excellent and delicious, but I like the appearance of the chicken wings with the cornstarch a little better because it doesn’t look too dark. I have always liked my fried chicken to appear a nice golden brown. 👍🏾
Looks delicious but I was wondering was it over seasoned? Seasonings in the marinate and also the floor? Just seems like a lot. Also is self rising flour good for flying chicken? That's the floor I usually use and have never tried all purpose or cornstarch. I love your video.

Hey I got a challenge for ya, can you try and do a copy cat recipe of the Pizza Hut spicy wings of the 90s? They are similar to the Spicy Anytizer wings that are sold today. I looked high and low and no one seems to be able to replicate that flavor and taste! If anyone can do it I think you can!

Invest in a digital food thermometer.. they’re less than $20 and they’ll always make sure you’re food comes out perfect Everytime. I sell them on my website or you can find one on Amazon
Good video. One suggestion though. I would suggest that you say Go Ahead instead of Go Head. Go ahead means to proceed (to the next step) whereas Go HEAD means to go to the toilet on a boat because the HEAD is the toilet on a boat or ship. This is a very common error that people make in YT videos. Otherwise a good video.
