I am glad we were not refined and rich. We had my grandmother's fried chicken, mashed potatoes and gravy with fresh green beans, clover rolls. Then to top it off a homemade strawberry ice cream, strawberries from my grandfather's garden.

@@retroguy9494 yes we took turns on a old ice cream machine turning the handle until it stopped turning that told us it was ready. My grandmother made a custard cream. Strawberry went in last.

@@VickiGonzales-oc9hj Nice. I had an uncle who used to make his own ice cream. I used to have it when we went to his house in the summertime when I was a boy. He must have been doing something right as he made it to age 95 before he died!

@@retroguy9494 My grandmother until 92. I think the stress we put on ourselves cause us to be more vulnerable to sickness. My daughter just got back from Scotland and the whole group of 12 got covid. She liked trying the different food and drinks. It is a shame they had to end the trip sick.

The 1970's?? It's not exactly like it was oh so log ago. I mean, c'mon man, lots of us that grew up in the 60's and 70's are still young enough and have plenty of years left! We ate the exact same thing as we eat today. Wealthy or not. Now, some things might have been more popular back then, like Delmonico cut steaks. I'm sure you can still find them, but they aren't as popular today.

Aspic kills the sequence I could eat any and all at least once but ASPIC? YIKES! I'm not originally American can someone explain this to me?

Aspic wasn't too common, maybe a Scandinavian and Pomerania influence. In Sweden, Germany and Poland they serve an aspic( head cheese) for Christmas

I worked for a high end mobile catering company in the UK back in the1970s. Typically we would work in marquees serving hunt balls,County weddings etc. A key element of a served buffet would be prawns in aspic which was difficult due to the need to ensure even distribution prawns and vegetable garnish throughout the mass of the dish. Aspic glaze was used over poached salmon to prevent it drying out and boeuf en gelee was served for similar reasons. This use of aspic predated refrigeration and was the preserve of the wealthy.

Aspic is NOT American. It's been around since the 1300's. Very simply put, it's basically Jell-O (gelatin) with meat, fish or vegetables encases inside it.

As a 15 year old Line Cook I was one of those that started cooking them in 1981. Then left and moved over to N.E. Ohio's only 5 star Japanese restaurant which put the chains Samurai and Benihana out of business locally.
