Herrine Makes New York's Best Pizza At Home With Lucali Chef Mark Iacono

Lucali is one of the most popular pizza restaurants in New York City. Chef and owner Mark Iacono teaches Insider’s Herrine Ro how to make the best home-cooked version of his famous margherita pie. The ingredients used include pantry staples and common grocery-store cheeses.
DOUGH:
33.6 ounces of water
3 1/2 pounds of flour
0.3 ounces of yeast
2 Tablespoons extra virgin olive oil
2 Tablespoons of salt
Put room temperature water in a large mixing bowl.
Remove a cup of water and dissolve the salt in it.
Add the yeast in the mixing bowl and dissolve. Then add your olive oil and stir.
Add 25% of your flour to the water and mix until smooth.
Add the salt water and mix for approximately 15 seconds, add the remaining flour. Mix/knead for approximately 10 minutes.
When finished kneading, cover dough with saran wrap and let rest for 45 minutes.
Cut the dough into eight, 10-ounce balls.
Baste with EVOO, then cover with saran wrap and let rise in the refrigerator for six hours to overnight.
TOMATO SAUCE:
Yellow onion, finely chopped
Garlic, minced
Dry oregano
Canned tomato sauce
Salt
Pepper
Sugar
Basil
CHEESE:
Low moisture mozzarella
Bufala mozzarella (or fresh mozzarella)
Grated parmesan cheese

I'm a Long Islander, family comes from Queens, before that Ireland.. Mark is a true New Yorker, feels like I'm related to him even though I'm not italian, I just know the type so well, best kind of people real New Yorkers, nicest, most down to earth, funniest, caring, and toughest people, in my opinion lol. Can't wait to visit Lucali's. I've been to many of the best in NY, never Lucali's, been wanting to for past 2 years, might do it this week.

I spoke with him a few times at Lucali and he's an incredibly nice respectful guy. He hooked me up with a table when they were all booked up, I didn't even know he was the owner until after.

@@anthonycelano165 sorry.. youtube is weird and doesn't always notify replies. The stone she is using is an emile henry pizza stone. I have one. If that sheet pan can fit this easily can. I actually don't even use mine anymore. If using a home oven a baking steel is the best.. I have a roccbox now and that's all I use..

I mean it's Pizza, there are no big secrets. However it takes a great deal of experience to get it top class and consistent and that you can't steal or copy, you have to do by simply learning and doing. It's the same with DiFara's or anyone else - everybody knows what's in/on it and you can come close if you're good but experts with a good palate will still know the difference. If i ever get to New York Lucali's is definitely on the to do list.

A good tip for launching your pizza successfully without a pizza, peel is sprinkle some corn meal on some tinfoil and put your dough on that. then add your sauce and toppings. When you go to slide it into the oven from the cutting board, the tinfoil come right off with the pizza on top of it and it will flash correctly on the hot steel in the oven. If you have a little bit of semolina flour, and some corn meal sprinkled on the tinfoil. The pizza will have a nice crust, and it will not stick. Foil also will make it easy to rotate the pizza to cook it evenly and easy to pull out of the oven.

Home cooked pizza lessons from the man himself, you can't beat that. Couple things that surprised me: 1. The use of fresh mozz in a home cooked oven. That stuff is notoriously wet, and typically requires higher temps than a home oven can produce to cook it properly... or so I thought. It looks like it actually turned out great on this pizza and I have to say I wasn't expecting those results. 2. The regular canned tomato sauce. I was expecting the more typical San Marzano canned tomatoes, so I was definitely surprised by that one as well. I'll have to try that canned tomato sauce sometime, and I'm definitely going to try the "double boil" method. 3. More surprising than anything is the fact that a sheet pan functioning as a makeshift pizza stone produced a bottom crust as nice as that one. I assumed preheating a baking try like that would help with the bake, but I wasn't expecting it to look that nice on the bottom. All in all, this man is a pizza wizard, and I'm not surprised that he is as successful as he has become. Maybe one day I'll be lucky enough to try his pizza myself.

Maybe, and maybe not. He has definitely said in the past that his recipe uses no sugar or oil, and this recipe has oil in it. So either he's tweaking the recipe for a home oven, he's changing it so competitors can't steal it, or he misspoke in the past. Who knows? It could be the real deal. I ran the numbers and it's pretty much right on the money for a New York pizza.

Just made it.....only problem I had was the fake peal. Had a terrible time getting the pizza to slide off the other pan.. all the toppings wanted to slide off the pizza as I tried to slide it in the oven....but it was good! Made a shrimp version with basil, onion, pepper, pesto, cheese, shrimp

It's a shame that whole milk mozzarella isn't more common. It amps up the pizza a bit IMO, but I almost never see it in a grocery store (it's actually easier to find fresh-made moz and drain it than drive across town to the one store I know carries it)
