With the current cost of labour per hour / day / week / month. Not to mention the quality of manual work, I feel machine & equipments like this are a God sent.

Qye bueno amigo .. soy venezolano pero vivo en Perú...yo fabrique tres maquinas para revocar dos de esas y una peristaltica.. te aconsejo .. qye soy te encarges de rellenar y otra persona de pasar la reglar y el acabado . Yo lo hago con dos operarios y hacemos 30 metros cuadrados por hora .. la peristaltica es mucho más rápida

All said and done - Would it make more sense to just tool the mortar onto the wall as opposed to using the compressor and avoid the hassel of all the extra equipment? Or do you feel it actually made the job easier?
Typically adhesion is superior to a sufficiently high velocity spray. I believe this is actually the real reason to do something like this, except for the ceiling where it's distinctly easier to spray
