Steeping chamomile flowers in hot water has been done by humans for centuries. The Egyptians have chamomile flowers in their hieroglyphics. The flower is slightly sweet but very vegetal in flavor.
Chamomile was seen as a cure for many ailments, what was not understood at the time was that the boiling water that the chamomile was steeped in was actually more of the cure than the chamomile itself. Science has caught up and analyzed and tested chamomile and have found that it does help to relieve pain related to mouth sores, some skin rashes and has a relaxing affect on lab mice (the result of chamomile relaxing humans any better than any other hot beverage at night has not proven out yet).
There are multiple varieties of chamomile, but the two big ones for beverage use are German and Roman chamomile. German chamomile is used in beer (stems and all). The Roman chamomile is steeped as a tea or tisane.
Chamomile can be grown quite successfully here in the United States. It can take over everything and the perinnial type can survive colder winters, so it can truly take over a garden.
