You can bend notes on the melodica if you very very slightly let go of the pressure of the key that you're playing. Best way to practice this is to press down a white key in the middle register, blow consistently and then very slowly let go of the pressure on the key and, if you do it subtly enough, there will be a point where the note will dip down (like in the video) before it stops sounding. The trick is to find that sweet spot.

when you play with both hands at 1:47 you play only two keys at a time....what happens if you try to play something like 8 keys at once? would only the lower ones be audible?

You just have to blow stronger to make audible all the notes.
